About Raffles Hotels & Resorts

Raffles & Fairmont the Red Sea is a key part of the Kingdom's groundbreaking Red Sea Project, offering visitors a nature-focused resort experience. This destination will feature 361 rooms, eleven distinct dining concepts—including an overwater restaurant with views of the Red Sea and mangroves—and a dedicated spa. Situated alongside an 18-hole championship golf course, the resort reflects Fairmont's reputation as a world-class golf destination. It is committed to setting new standards in sustainable development, positioned on 200km of untouched coastline, an archipelago of over 90 unspoiled islands, dormant volcanoes, rich marine habitats, and ancient archaeological sites.

The Role of Chef de Partie

As a Chef de Partie, you will be responsible for managing a specific kitchen section, ensuring the highest standards of food quality, presentation, and consistency. This role operates in alignment with Raffles & Fairmont brand standards within a luxury resort environment. You will support the Sous Chef and Chef de Cuisine in daily culinary operations while also leading and developing junior chefs within your section.

Key Responsibilities

Assume full responsibility for a designated kitchen section during both preparation and service periods.
Prepare, cook, and present dishes meticulously according to established recipes and luxury presentation standards.
Supervise, train, and motivate Commis and Demi Chef de Partie team members within the section.
Ensure that food quality, taste, and consistency consistently meet Raffles & Fairmont expectations.
Maintain strict adherence to HACCP, food safety, and hygiene standards at all times.
Control food costs effectively by minimizing waste and ensuring proper stock handling, including FIFO principles.
Assist in menu planning, recipe development, and new dish trials as required by the culinary leadership.
Coordinate seamlessly with other kitchen sections to ensure smooth and efficient service operations.
Ensure the cleanliness, organization, and proper maintenance of all kitchen equipment within the assigned section.
Adhere to all hotel policies, grooming standards, and health & safety regulations.

Qualifications and Experience

A minimum of 5 to 10 years of culinary experience in a professional kitchen setting, preferably within a luxury hotel or resort environment.
Demonstrated ability to manage a kitchen section and uphold high standards of food preparation and presentation.
Strong understanding and practical application of food safety, hygiene, and HACCP principles.

Work Environment and Location

This is a full-time position based at the Raffles & Fairmont resort in Umluj, Tabuk, Saudi Arabia. The role offers the opportunity to contribute to a world-class luxury culinary operation within a unique and environmentally significant destination.
