About the Role

Raffles & Fairmont The Red Sea, situated within the Red Sea Project in Tabuk, is seeking a Cluster Executive Pastry Chef to lead pastry and bakery operations across both properties. This full-time position requires a minimum of 10 years of experience and will be based in the Tabuk region, with potential involvement in Umluj.

Role Overview

Reporting to the Cluster Executive Chef, the Cluster Executive Pastry Chef will be responsible for overseeing and inspiring all pastry and bakery activities for both Raffles and Fairmont Red Sea. This role ensures that all pastry creations align with the distinct brand identities and culinary standards of each resort, maintaining high levels of excellence, creativity, and consistency across 361 rooms and multiple dining venues, including banqueting and in-room dining.

Key Responsibilities

• Manage daily pastry and bakery operations for all restaurants, lounges, banquets, in-room dining, and retail pastry outlets across both properties.
• Develop and implement standard recipes and presentation guidelines to ensure consistency, quality, and cost control.
• Collaborate with the Cluster Executive Chef and Food & Beverage leadership to integrate pastry offerings with the overall culinary vision.
• Drive innovation in dessert and pastry creation, balancing contemporary trends with the sophistication expected of Raffles and Fairmont brands.
• Ensure adherence to all health, safety, sanitation, and hygiene standards within pastry operations.
• Lead, mentor, and develop a team of pastry chefs, bakers, chocolatiers, and decorators.
• Identify training needs and foster a culture of continuous learning and creativity.
• Manage team scheduling, performance evaluations, and succession planning.
• Promote a positive and inclusive work environment aligned with Accor’s values.
• Manage pastry-related budgets, including food and labor costs, and productivity targets.
• Participate in menu engineering and cost analysis to optimize profitability while upholding brand standards.
• Support business development through creative product offerings for events, weddings, and retail.
• Collaborate with procurement to source premium ingredients sustainably and cost-effectively.
• Ensure all pastry experiences reflect the luxury and artistry of the Raffles and Fairmont brands.
• Engage with guests to gather feedback and enhance memorable experiences.

Qualifications and Experience

• Degree or diploma in Culinary Arts / Pastry & Bakery or equivalent certification from a recognized institution.
• A minimum of 10 years of progressive experience in luxury hotels or resorts.
• At least 5 years in a senior pastry leadership role.
• Proven experience managing multiple outlets or properties within a luxury or cluster environment.
• Advanced skills in pastry, chocolate, confectionery, viennoiserie, and artistic presentation.
• Fluent in English; knowledge of Arabic is an asset.
