Sous Chef

About the Role

Catrion Group is seeking a dedicated Sous Chef to join their team in Riyadh. This permanent position requires 2-5 years of experience and involves overseeing culinary production for airline catering, company restaurants, and event services. The Sous Chef will play a critical role in ensuring high standards of food quality, hygiene, and operational efficiency across all kitchen operations.

Key Responsibilities

• Oversee and manage food production for airline catering, company restaurants, and event services.
• Ensure all meal production consistently meets Saudia Catering standards and client specifications.
• Supervise and actively participate in the preparation of hot food products, adhering to customer demand and presentation requirements.
• Collaborate effectively with various departments, including Pre-Preparation, Cold Kitchen, and Bakery.
• Conduct comprehensive full shift checks and meticulously document adherence to established quality standards.
• Monitor production deadlines and promptly inform the Head Chef of any potential issues or delays.
• Perform daily quality checks on products and record compliance with standards.
• Recommend alternative raw materials when necessary and communicate these recommendations to relevant sections.
• Oversee packing procedures to ensure accuracy and compliance.
• Formulate production lists and daily flight orders in alignment with demand forecasts.
• Assist in production planning, ordering, and daily productivity monitoring.
• Track traffic changes and adapt production schedules accordingly to maintain efficiency.
• Optimize productivity and maintain accurate shift records.
• Manage month-end stocktaking processes and implement controls to minimize wastage and breakage.

Team and Staff Management

• Plan staff schedules, rosters, and vacation plans to effectively manage performance and control costs.
• Enforce strict hygiene standards and ensure all staff attend required training courses.
• Maintain high staff morale, address absenteeism proactively, and enforce disciplinary procedures when necessary.
• Foster open staff communication and support Saudization training initiatives.

Quality and Efficiency

• Ensure consistent adherence to hygiene, quality, and temperature control standards.
• Regularly check product expiry dates and records to uphold quality.
• Recommend procedural improvements to enhance overall efficiency within the kitchen operations.

Experience and Work Type
