Boutique Group is seeking an Assistant Restaurant Manager to join the team at The Red Palace in Riyadh. The Red Palace, originally built in 1943, has been reimagined as an ultra-luxury boutique hotel, blending historic elegance with contemporary sophistication. This full-time position requires 2-5 years of experience in a relevant hospitality role.

Role Purpose

The Assistant Restaurant Manager supports the Restaurant Manager in ensuring an exceptional guest experience, driving revenue, and overseeing smooth daily operations. This involves leading the front-of-house team, maintaining high service standards, and ensuring compliance with quality, hygiene, and financial controls within the restaurant environment.

Key Operational Responsibilities

• Support the Restaurant Manager in daily outlet operations, ensuring consistent execution of brand standards and service sequence.
• Lead floor operations during service, managing pacing, table allocations, reservations, walk-ins, and peak-time flow.
• Ensure guest recognition (VIPs, repeat guests), handle special requests, and oversee service recovery as needed.
• Conduct daily pre-shift briefings, ensuring team readiness in grooming, product knowledge, section setup, and service priorities.
• Coordinate closely with kitchen and bar to ensure quality, timing, and accurate delivery of food and beverages.
• Maintain cleanliness, ambiance, and overall outlet presentation, including music, lighting, table setup, and side stations.

Guest Experience and Efficiency

• Assist in collaborating with the Restaurant Manager to develop innovative menus and dining concepts that align with the hotel's positioning.
• Help ensure consistently high-quality food, beverage, and service across the restaurant.
• Monitor guest feedback and contribute to addressing any issues or concerns promptly to maintain guest satisfaction.
• Support the cultivation of a guest-centric culture among restaurant staff, emphasizing personalized service and attention to detail.
• Assist in developing and implementing operational policies and procedures to optimize efficiency and productivity.
• Monitor and analyze key performance indicators (KPIs) related to the restaurant's operations and recommend strategies to improve performance.

Financial Performance and Compliance

• Support the Restaurant Manager in contributing to the development and implementation of strategies to maximize revenue and profitability.
• Monitor pricing, food cost, and sales performance, recommending corrective actions as necessary.
• Assist in analyzing financial reports and identifying variances, proposing actions to improve financial performance.
• Help implement cost control measures without compromising quality or guest satisfaction.
• Ensure compliance with all applicable health, safety, and regulatory standards within the restaurant.
• Maintain a safe and clean environment for guests and staff, adhering to food safety and sanitation guidelines.
