About the Role

Saudi Airlines Catering Company is seeking an experienced Sous Chef to join their full-time team in Riyadh. This role requires 5-10 years of relevant experience and involves supervising and actively participating in daily food production. The Sous Chef ensures all meals are prepared and cooked to agreed standards, adhering to company guidelines and client specifications, with a strong emphasis on maintaining hygiene and food safety protocols.

Core Responsibilities

• Prepare and cook all food items according to established standards, contract requirements, and business levels.
• Supervise and participate in daily food production activities.
• Ensure all meals are produced in strict accordance with company standards and individual client and customer specifications.
• Maintain high standards for food and cleaning services, with diligent adherence to HACCP requirements.
• Oversee all aspects of food production within the assigned unit, identifying and addressing any service deficiencies.

Operational Management and Compliance

• Support the Head Chef in adhering to budget requirements and ensuring efficient use of all resources.
• Manage and rotate stock to ensure food safety, minimize wastage, and achieve contract food costs.
• Ensure all required paperwork is accurately completed and submitted on time.
• Verify that all food items are within their required use-by or best-before dates, in consultation with the unit storekeeper.
• Ensure full compliance with all company Standard Operating Procedures (SOPs).
• Report any equipment defects or maintenance needs that could impact service delivery.
• Immediately report all accidents, incidents, injuries, and customer complaints.
• Attend client and company training courses as necessary, actively supporting all safety initiatives.
• Ensure work is consistently conducted hygienically and that safe work practices are followed.
• Maintain personal working hygiene standards that meet both company and statutory requirements.
• Be prepared to work in any location across KSA as assigned by the department manager.

Team Leadership and Development

• Provide guidance and support to all catering team members working within food preparation areas.
• Conduct, monitor, and evaluate training for the catering team, including imparting cooking skills and methods.
• Organize and plan work continuity and service provision.
• Monitor and maintain high levels of conduct and work performance within the team.
• Identify personal and team training needs, developing monthly training plans accordingly.

Resource and Equipment Stewardship

• Ensure the correct and safe operation of all machinery, maintaining cleanliness and hygiene.
• Perform basic maintenance and preparation of equipment for use, reporting faulty or unfit items and liaising with maintenance and procurement for repairs.
• Demonstrate knowledge and competency in the use of cleaning materials and chemicals, ensuring correct storage by Stewarding.
• Train others in the correct and safe methods of machinery and equipment use and maintenance.
• Ensure the correct and effective use of all consumables.
• Participate in inspections and contribute to the process of identifying and implementing improvements.

Required Qualifications and Experience

• A minimum of 5-10 years of experience in a similar culinary role.
• Excellent food knowledge, encompassing a wide range of cuisines including, but not limited to, Asian, Indian, European, and Arabic.
