Shangri-La Hotel in Jeddah is seeking a Chef De Cuisine (Lebanese Cuisine) to oversee the overall operation of the kitchen. This full-time position requires 5-10 years of experience and focuses on ensuring maximum guest satisfaction and quality while maintaining profitability and high standards of food safety and hygiene.

Shangri-La Jeddah is located on the new Jeddah Waterfront along the Red Sea. The hotel features interiors that reflect the sea and sandy beaches, with floor-to-ceiling windows. It offers a dedicated Kids Club and supervised play area, along with various dining concepts.

Key Responsibilities

• Oversee consistency in kitchen preparations to ensure quality products and adherence to standard recipes.
• Place orders for necessary products for events and verify quality upon receipt.
• Ensure all Lebanese dishes are prepared according to established recipes and hotel standards.
• Maintain consistency in taste, quality, and presentation of all dishes.
• Ensure assigned work areas have appropriate par stock levels and supplies based on daily production sheets, menus, and events.
• Maintain cleanliness and working condition of all refrigeration, equipment, storage, and work areas to comply with health department regulations.
• Check and control proper product storage and portion control, particularly for specific meat cuts, to maintain quality.
• Delegate tasks and assist in preparing food items.
• Prepare daily requisitions for supplies and food items required for production.
• Prepare all dishes following specified recipes and yield guides.

Qualifications and Experience

• A minimum of 5-10 years of experience in a similar culinary role.
• Demonstrated expertise in Lebanese cuisine.
• Proven ability to manage kitchen operations and ensure high standards of food quality and safety.
