Boutique Group is seeking a Chef De Partie for The Red Palace, an ultra-luxury boutique hotel located in Riyadh, Saudi Arabia. Originally built in 1943, The Red Palace has been transformed to blend historic elegance with contemporary sophistication. This landmark offers meticulously restored architecture and curated cultural experiences, honoring its legacy while providing a modern luxury experience.

The Role of Chef De Partie

The Chef De Partie supports the Sous Chef in upholding high product standards and contributing to profitability within the kitchen operations. This full-time role involves efficient organization and setup of the assigned section to enhance speed and productivity, alongside delivering training according to established plans.

Key Responsibilities

• Assume full responsibility for the outlet when the Sous Chef is absent.
• Inspect food stores and ensure proper storage practices, including FIFO principles, to minimize waste.
• Oversee the section's operations to ensure adherence to correct daily food preparation procedures.
• Maintain a thorough understanding of the company's environmental, safety, and hygiene policies.
• Monitor food quality according to company standard recipes for à la carte and buffet setups.
• Ensure staff possess comprehensive product knowledge to effectively explain services and facilities.
• Confirm associates are familiar with safety, first aid, and fire emergency procedures.
• Verify all equipment is functional and regularly serviced.
• Encourage timely reporting of equipment or lighting failures to facilitate prompt repairs.
• Ensure associates complete and submit Maintenance Request Forms for all repairs and servicing.
• Maintain high standards of cleanliness in all kitchen and back-of-house areas.
• Enforce strict personal hygiene, cleanliness, and grooming standards.
• Provide recommendations for departmental promotions.
• Implement initiatives for quality team building.
• Participate in regular briefings led by the Sous Chef to engage associates in decision-making.
• Foster creativity and initiative within the team.
• Ensure that all supervised associates are aware of and adhere to hotel rules and standards, with disciplinary action enforced for non-compliance.

Food Quality and Safety Standards

• Ensure adherence to food safety, sanitation standards, local health regulations, and industry best practices.
• Establish and enforce standard operating procedures for food handling, storage, and preparation.
• Conduct routine inspections and audits to uphold the highest levels of food quality, hygiene, and safety.
