About the Role

Shangri-La Hotel in Jeddah is seeking an Executive Pastry Chef to manage the operations of its pastry and bakery department. This full-time role requires implementing standardized procedures, rules, and regulations in line with Shangri-La Hotel's standards and policies. The position is based in Jeddah and requires 5-10 years of experience.

Company Overview

Shangri-La Jeddah is located on the new Jeddah Waterfront along the Red Sea. The hotel features 203 rooms and suites, 17 luxury serviced apartments, and 5 restaurants and lounges, including Shang Palace. It is conveniently situated near Jeddah’s landmarks and the Red Sea Mall. The property also includes 116 privately owned Burj Assila Residences, with access to The Wellness Club facilities.

Key Responsibilities

• Assist the Executive Chef in managing all pastry operations and preparation, ensuring compliance with Food & Beverage policies, standards, and procedures.
• Create and execute pastry menus.
• Comply with all local, state, and hygiene standards.
• Maintain purchasing, receiving, and food storage standards.
• Ensure department policies are administered fairly and consistently.
• Perform daily walk-throughs of the pastry kitchen to ensure full compliance with Department of Health regulations and Shangri-La Hotel standards.
• Participate in hotel promotional activities, such as cooking demonstrations, media events, and guest interactions.
• Collaborate with the culinary team to develop seasonal and special event menus, incorporating new techniques and trends.
• Oversee and manage the day-to-day operations of the pastry department, including staff scheduling, inventory control, and budget management.

Qualifications and Experience

• 5-10 years of experience in a relevant role.
• Demonstrated ability to manage pastry and bakery operations.
• Knowledge of standardized procedures, rules, and regulations in a hotel environment.
• Understanding of food and beverage policies, standards, and procedures.
• Familiarity with local, state, and hygiene standards.
