About the Role

Accor is seeking a Restaurant Manager - Mediterranean Cuisine for Fairmont The Red Sea. This full-time role involves overseeing the daily operations of the Mediterranean restaurant, ensuring service excellence and alignment with Fairmont standards. The position requires 2-5 years of experience in a relevant field.

Fairmont The Red Sea, part of the Red Sea Project, will offer a sanctuary of refined elegance within Saudi Arabia’s Red Sea destination. The property blends Raffles’ service with the natural beauty and sustainability ethos of Red Sea Global, providing a curated haven for travelers. The resort features 361 rooms and 11 distinct dining concepts.

Key Responsibilities

Oversee daily restaurant operations, ensuring seamless service in line with Fairmont standards.
Ensure the restaurant environment reflects Mediterranean cuisine's heritage and identity.
Conduct daily briefings and inspections to maintain consistency in food quality, service, and cleanliness.
Manage inventory, sourcing, and cost, optimizing efficiency and minimizing waste while using authentic ingredients.
Ensure compliance with HACCP standards, local regulations, and Fairmont policies.
Curate a personalized Mediterranean dining experience, bringing dishes to life through storytelling.
Anticipate guest needs and handle feedback with empathy and discretion.
Build guest relationships, recognizing preferences to encourage return visits.
Lead and inspire the team, fostering a culture of passion and excellence.
Coach and develop team members on service artistry and cuisine knowledge.
Embed Fairmont service culture through continuous training and role modeling.
Ensure high standards of grooming, professionalism, and emotional intelligence within the team.
Support talent development, succession planning, and growth within the Fairmont family.
Drive revenue growth through strategic upselling and promotions.
Monitor financial performance, including revenue, labor costs, and cost of sales, against budget targets.
Prepare forecasts, analyze trends, and implement action plans to improve profitability.
Collaborate with marketing and events teams to promote the restaurant.
Ensure accurate billing, cash handling, and compliance with financial procedures.
Support pre-opening initiatives, including recruitment, onboarding, and training programs.
Contribute to the development of SOPs, guest journey mapping, and service choreography.
Champion a culture of belonging, creativity, and excellence.
Collaborate cross-functionally to ensure a seamless guest journey.
Ensure adherence to all health, safety, and hygiene standards.
Conduct regular audits and ensure prompt implementation of corrective actions.
Promote a safe working environment for colleagues and guests.

Experience and Qualifications

2-5 years of experience in restaurant management, preferably within Mediterranean cuisine.
Demonstrated ability to oversee daily operations and ensure service excellence.
Experience in inventory control, cost management, and financial performance monitoring.
Knowledge of HACCP standards and relevant operational policies.
Proven leadership skills with experience in team development and training.
Ability to manage guest feedback and ensure service recovery.
Experience with pre-opening initiatives is an advantage.

Work Environment

This is a full-time position based at Fairmont The Red Sea. The role involves working within a luxury resort setting, collaborating with various teams to deliver a high-quality guest experience.
