Role Summary

The Sous Chef Pastry supports the Head Pastry Chef in managing the pastry section. This role involves maintaining quality standards, contributing to team development, and leading the section as required. The Sous Chef Pastry is responsible for daily production, from viennoiserie to plated desserts, ensuring consistency, cost awareness, and adherence to Le Café LPM standards.

Key Responsibilities

• Execute classic and contemporary pastry techniques with precision and attention to presentation.
• Motivate and develop the pastry team, maintaining discipline during service.
• Lead the pastry section confidently in the absence of the Head Pastry Chef.
• Plan daily production and monitor product shelf life.
• Ensure adherence to FIFO (First-In, First-Out) principles and proper labeling.
• Oversee freezing and defrosting procedures to maintain product integrity.
• Ensure all pastry items meet established standards for taste, texture, and presentation.
• Maintain a clean, safe, and compliant pastry section.
• Monitor stock levels, manage portion control, and reduce waste.
• Maintain high quality standards while managing costs effectively.

Required Profile

Qualifications and Experience

• 5-10 years of relevant experience in pastry.
• Proven ability to support a Head Pastry Chef in managing a pastry section.
• Strong understanding of pastry techniques and production processes.

Reporting Structure

The Sous Chef Pastry reports directly to the Head Chef or Head Pastry Chef.
