Role Overview: Chef De Partie, Italian Cuisine

Hilton is seeking a Chef De Partie, Italian Cuisine to join its culinary team in Jeddah, Makkah, Saudi Arabia. This full-time position is responsible for managing an assigned section within the Milano Restaurant kitchen. The role focuses on preparing high-quality Italian dishes, ensuring authentic flavors, and adhering to Hilton's operational standards and food safety regulations.

Position Summary

The Chef de Partie plays a crucial role in delivering an exceptional Italian dining experience. This involves preparing a diverse range of Italian specialties, including pasta, risotto, sauces, pizzas, and appetizers. The individual will work collaboratively with the Sous Chef and the broader culinary team to ensure smooth kitchen operations, efficient mise en place, excellent food presentation, and overall guest satisfaction.

Key Responsibilities

• Prepare and cook authentic Italian A La Carte dishes in accordance with standard recipes.
• Manage the assigned kitchen section effectively during daily service.
• Specialize in preparing Italian dishes such as pasta, risotto, sauces, pizza toppings, appetizers, and main courses.
• Ensure consistent excellence in food quality, taste, texture, and presentation.
• Complete daily mise en place preparations according to business requirements.
• Apply proper cooking techniques and maintain authentic Italian culinary standards.
• Coordinate with the Sous Chef and other kitchen sections during service periods.
• Ensure all orders are prepared accurately and delivered within required timeframes.
• Monitor food freshness, quality, and proper storage procedures.
• Maintain strict HACCP standards and food safety regulations.
• Control food waste through proper handling and portion control.
• Follow FIFO (First-In, First-Out) procedures and assist with stock rotation.
• Maintain cleanliness and organization of the assigned workstation.
• Ensure proper handling and storage of ingredients and kitchen equipment.
• Assist in training Commis Chefs and junior team members.
• Support the implementation of menu changes, promotions, and seasonal Italian specialties.
• Handle guest special requests and dietary requirements professionally.
• Participate in inventory checks and kitchen meetings as required.
• Report equipment issues and operational concerns to the Sous Chef.
• Perform other duties as assigned by the Executive Chef.

Required Qualifications and Experience

• Specialized training or certification in Italian cuisine is preferred.
• Minimum of 4–6 years of culinary experience in luxury hotels or premium Italian restaurants.
• Minimum of 2 years of experience as Chef de Partie specifically within an Italian cuisine section.
• Strong practical experience in authentic Italian A La Carte operations.
• Proven knowledge of preparing pasta, risotto, sauces, pizza, and various Italian cooking techniques.
• Experience within luxury hotel restaurants is highly preferred.
• Previous experience with Hilton or other international luxury brands is considered an advantage.
