About the Role

We are seeking an experienced Production Manager to lead our bakery manufacturing operations, with a specific focus on buns, breads, and rolls. This full-time position is based in the Makkah and Jeddah regions and requires 5-10 years of relevant experience in production management within the food industry.

Production Operations Management

The Production Manager will oversee all aspects of the bakery production lifecycle, ensuring efficient and high-quality output.

  • Manage end-to-end production activities across bakery manufacturing lines, including mixing, forming, baking, cooling, slicing, packaging, and dispatch preparation.
  • Ensure daily production targets are achieved as per production plans, customer demand, and quality standards.
  • Develop and implement production schedules in coordination with Planning, Supply Chain, and Sales teams.
  • Monitor production performance, identify bottlenecks, and implement corrective actions to improve output and efficiency.
  • Ensure smooth production flow with minimum downtime and maximum equipment utilization.
  • Lead continuous improvement initiatives to enhance productivity, capacity, and operational efficiency.

Production Planning and Cost Control

This role involves strategic planning and vigilant cost management to optimize operational expenses and resource allocation.

  • Prepare manpower and resource plans to meet production requirements.
  • Monitor production costs, including labor, raw material consumption, energy usage, and operational expenses.
  • Drive initiatives to reduce production losses, waste, and rework.
  • Monitor key production KPIs such as production output, yield performance, waste percentage, downtime, labor productivity, and Overall Equipment Effectiveness (OEE).

Quality and Food Safety Compliance

A critical aspect of the role is ensuring the highest standards of product quality and strict adherence to food safety regulations.

  • Ensure strict compliance with food safety standards, including HACCP, GMP, ISO 22000, and Saudi Food and Drug Authority (SFDA) requirements.
  • Work closely with Quality Assurance teams to maintain product consistency and compliance.
  • Ensure adherence to hygiene, sanitation, allergen control, and traceability procedures.
  • Support internal and external audits and ensure timely closure of corrective actions.

Maintenance and Cross-Functional Collaboration

The Production Manager will coordinate closely with various departments to ensure operational efficiency and support continuous improvement initiatives.

  • Coordinate with Maintenance teams to ensure preventive maintenance schedules are followed and minimize production interruptions through effective troubleshooting and root cause analysis.
  • Support the installation, commissioning, and optimization of new production equipment, ensuring proper handling and operation of bakery machinery.
  • Collaborate with Quality Assurance, Maintenance, Supply Chain, Warehouse, R&D, and HR for seamless operations and employee development.
  • Participate in factory improvement projects and operational excellence programs.

Candidate Profile

The ideal candidate will possess 5-10 years of experience in a production management role, preferably within a bakery or similar food manufacturing environment. Strong leadership, operational expertise, and a commitment to quality and efficiency are essential for success in this full-time position in Makkah or Jeddah.
