About The Red Palace and Boutique Group

Boutique Group is reimagining The Red Palace, a historic landmark in Riyadh built in 1943, as an ultra-luxury boutique hotel. This establishment blends timeless elegance with contemporary sophistication, offering an exclusive experience that highlights the Kingdom’s rich past through meticulously restored architecture, curated cultural experiences, and unparalleled service. This full-time position for a Chef De Partie is based in Riyadh.

The Role of Chef De Partie

As a Chef De Partie, you will play a crucial role in supporting the Sous Chef to uphold the highest standards of product quality and profitability within the kitchen and designated areas. This position requires efficient organization and setup of your assigned section to maximize productivity and speed, alongside conducting training sessions as per the established plan.

Core Culinary Operations

  • Assume full responsibility for the outlet in the absence of the Sous Chef.
  • Inspect food stores and implement proper storage practices, including FIFO (First-In, First-Out), to minimize wastage.
  • Supervise and manage the entire section’s operation to ensure adherence to correct procedures in daily food preparation.
  • Monitor food quality according to established standard recipes for both à la carte and buffet setups.
  • Demonstrate strong butchery skills for handling fish, meat, and poultry preparation.
  • Assist in managing kitchen requisitions, ordering procedures, and inventory control to ensure smooth kitchen operations.

Kitchen Management and Standards

  • Maintain a comprehensive understanding of the environment, safety, and hygiene policies.
  • Ensure all staff possess a high level of product knowledge to effectively explain services and facilities to clients.
  • Ensure all equipment is functioning correctly and serviced regularly.
  • Encourage team members to promptly report any equipment or lighting failures to expedite repairs or replacement.
  • Ensure associates complete and submit Maintenance Request Forms directly to Maintenance for all repairs and servicing.
  • Maintain a high level of cleanliness in all kitchens and heart-of-the-house areas.

Safety, Hygiene, and Compliance

  • Ensure associates are familiar with safety, current first aid, and fire emergency procedures.
  • Ensure compliance with food safety and sanitation standards, local health regulations, and industry best practices.
  • Establish and enforce standard operating procedures for food handling, storage, and preparation.
  • Conduct regular inspections and audits to maintain the highest level of food quality, hygiene, and safety.
  • Insist on high standards of personal hygiene, cleanliness, and grooming.
  • Demonstrate compliance with legislated health and safety requirements in the workplace.
  • Initiate immediate action to correct hazardous situations and notify relevant associates of potential danger.
