Boutique Group is seeking a Demi Chef de Partie to join the culinary team at The Red Palace in Riyadh. The Red Palace, a significant landmark originally built in 1943, has been reimagined as an ultra-luxury boutique hotel. It blends timeless elegance with contemporary sophistication, offering meticulously restored architecture, curated cultural experiences, and dedicated service, honoring its legacy as a symbol of Saudi Arabia’s heritage.

Role Summary

The Demi Chef de Partie assists the Chef de Partie in establishing and maintaining the highest standards of product quality and profitability within the kitchen and other designated areas. This full-time role involves supervising commis staff, assigning specific duties, and providing instruction to ensure fair and effective team operations.

Key Responsibilities

• Assume complete responsibility for the outlet in the absence of the Sous Chef.
• Inspect food stores and implement proper storage protocols, including FIFO (First-In, First-Out), to prevent wastage.
• Supervise and administer the entire section’s operation to ensure adherence to correct procedures in daily food preparation.
• Monitor the quality of food according to established standard recipes for both à la carte and buffet setups.
• Ensure compliance with food safety and sanitation standards, local health regulations, and industry best practices.
• Establish and enforce standard operating procedures for food handling, storage, and preparation.
• Ensure all equipment is functioning correctly and serviced regularly, encouraging immediate notification of any failures for prompt repair or replacement.
• Maintain a high level of cleanliness in all kitchens and heart-of-house areas, emphasizing personal hygiene, cleanliness, and grooming among staff.

Team Leadership and Professional Conduct

• Ensure all associates under supervision are fully aware of hotel rules and that these rules are implemented to the highest standards.
• Encourage creativity, initiative, and opportunities for quality team building within the department.
• Attend regular briefings conducted by the Sous Chef to involve associates in aspects of decision-making.
• Ensure all staff possess a high level of product knowledge to effectively explain services and facilities to clients.
• Maintain complete familiarity with safety, current first aid, and fire emergency procedures, and initiate immediate action to correct hazardous situations.
• Demonstrate compliance with legislated health and safety requirements in the workplace.
• Embrace and practice the company’s legacy values and competencies in all team and stakeholder interactions, acting as a role model.
