About the Role

Marriott International is seeking a dedicated Cook Lead / Demi Chef De Partie (Pastry) to join our culinary team. This full-time position is based in Jiddah, Makkah, Saudi Arabia, and plays a key role in the preparation and presentation of high-quality pastry items. The successful candidate will be responsible for ensuring culinary excellence and adherence to Marriott's standards.

Culinary Operations and Food Preparation

The primary duties of this role involve precise food preparation, temperature regulation, and maintaining food quality. Key responsibilities include:

  • Preparing special meals or substitute items as required.
  • Regulating the temperature of ovens, broilers, grills, and roasters to ensure proper cooking.
  • Managing food thawing processes by pulling items from freezer storage to thaw in the refrigerator.
  • Ensuring proper portioning, arrangement, and garnishing of all food items.
  • Maintaining accurate food logs and monitoring the quality and quantity of prepared food.
  • Communicating assistance needed during busy periods to ensure smooth operations.
  • Informing the Chef of excess food items that can be utilized in daily specials.
  • Notifying Food & Beverage service staff about menu specials and any out-of-stock items.
  • Preparing and cooking food in strict accordance with established recipes, quality standards, presentation guidelines, and food preparation checklists.
  • Preparing cold food items as per menu requirements.

Team Leadership and Support

This role involves providing essential support to management in team development and fostering a positive work environment. Responsibilities include:

  • Assisting management in hiring, training, scheduling, evaluating, counseling, disciplining, motivating, and coaching employees.
  • Serving as a role model for team members, demonstrating professionalism and adherence to standards.
  • Developing and maintaining positive working relationships with colleagues and supporting the team to achieve common goals.
  • Listening and responding appropriately to the concerns of other employees.
  • Anticipating and addressing guests’ service needs with a proactive approach.
  • Speaking with others using clear and professional language.

Workplace Standards and Safety

Maintaining a safe, secure, and professional work environment is critical. This includes:

  • Following all company, safety, and security policies and procedures.
  • Reporting maintenance needs, accidents, injuries, and unsafe work conditions to the manager promptly.
  • Completing all required safety training and certifications.
  • Ensuring uniform and personal appearance are clean and professional at all times.
  • Maintaining confidentiality of proprietary information and protecting company assets.
  • Ensuring adherence to quality expectations and standards across all tasks.

Experience and Physical Requirements

Candidates for this role should possess 5-10 years of experience in a relevant culinary position, preferably with a focus on pastry. The role also requires the ability to perform certain physical tasks, including:

  • Standing, sitting, or walking for extended periods of time.
  • Reaching overhead and below the knees, including bending, twisting, pulling, and stooping.
  • Moving, lifting, carrying, pushing, pulling, and placing objects weighing less than or equal to 25 pounds without assistance.
  • Performing other reasonable job duties as requested by Supervisors.
