Your Responsibilities:

• Inspect and prepare the workstation in room service.
• Prepare daily ingredient and food supplies requisition or transfer as per the In-Room Dining menu.
• Ensure dishes are prepared according to correct recipes and quantities.
• Train and guide cooks and DCDP effectively.
• Control costs and minimize waste in room service.
• Communicate any shortages to the sous chef or Executive chef promptly.
• Take charge of kitchen operations in the absence of the sous chef.
• Present food attractively and create decorative displays.
• Assist with scheduling and tracking team attendance.
• Prepare manning guides and departmental budgets.
• Maintain production and operational records.
• Follow standard recipes to prepare dishes.

What You Will Be Doing:

• Assist in directing and controlling the whole food production under the guidance of the Sous Chef.
• Share ideas, opinions, and suggestions to improve the environment and menus.
• Ensure consistency in the preparation of all food items according to property recipes and standards.
• Communicate effectively with the team and seek guest feedback.
• Assist in developing and implementing standards, recipes, portion sizes, and costing.
• Support kitchen operation and handle daily market lists and inter-kitchen transfers as needed.
• Check and taste all food items in accordance with Executive Chef’s specifications.
• Maintain minimal food waste through proper management of food rotation and storage.
• Adhere to Food Safety guidelines to ensure safe handling, storage, and preparation of food.
• Keep kitchen work area clean and organized, ensuring equipment is functional.
• Promote teamwork and morale within the kitchen and with other departments.

Qualifications:

• 46 years of cooking experience, including at least 2 years in luxury hotels.
• Food Safety Certificate or recognized international equivalent required.
• Proficiency in a la carte and production cooking.
• Excellent interpersonal and communication skills.
• Strong leadership and organizational skills, innovative and detail-oriented.

Physical Aspects of the Position:

• Constant standing and walking throughout shifts.
• Frequent lifting and carrying of heavy items.
• Regular kneeling, pushing, and pulling.
• Frequent climbing of ladders, stairs, and ramps.

• Proven experience in pastry or bakery roles.
• Solid understanding of baking tools and equipment.
• Pastry decorating skills are a plus.
• A certificate in culinary arts or related fields is an asset.
• Basic English communication skills.
• Attention to detail and a positive attitude to enhance staff morale.
