About the Role

The Ritz-Carlton is seeking a Hygiene & Culinary Administrative Supervisor - Saudi National. This full-time role involves providing administrative, coordination, and food hygiene support to the Culinary operation. The supervisor will maintain accurate culinary and food safety records, assist with departmental administration, monitor hygiene documentation, and support compliance with company standards, HACCP requirements, local regulations, and property procedures. The role requires 2-5 years of experience.

Key Responsibilities

  • Provide administrative support to the Executive Chef and Culinary leadership team, including maintaining departmental files, correspondence, reports, trackers, and schedules.
  • Assist in preparing culinary duty rosters, staffing schedules, and tracking attendance, vacation, and leave.
  • Coordinate culinary meetings, prepare agendas, record minutes, and follow up on action items.
  • Prepare presentations, reports, notices, memos, and operational documents, and maintain culinary standard operating procedures and recipes.
  • Support the preparation of purchase requests and maintain records related to kitchen equipment, uniforms, and departmental assets.
  • Maintain food safety, hygiene, sanitation, and HACCP documentation, ensuring records are complete, accurate, and properly filed.
  • Monitor temperature logs for food storage, cooking, and receiving, and maintain records related to cleaning schedules, pest control, and food sampling.
  • Support monitoring of food labeling, date coding, storage procedures, and FIFO/FEFO requirements, reporting hygiene concerns or potential food safety risks.
  • Assist in preparing for internal and external hygiene audits and inspections, conducting routine hygiene checks in various food handling areas.
  • Track corrective and preventive actions for hygiene observations, reporting serious non-conformities to management.
  • Monitor personal hygiene and grooming requirements for food handlers and support the safe handling and storage of cleaning chemicals.
  • Maintain records of food handler certificates, medical requirements, and permits, coordinating renewals and ensuring availability for inspections.
  • Coordinate hygiene, HACCP, allergen awareness, sanitation, and food safety training, maintaining attendance records and certification files.
  • Maintain updated culinary associate records, track attendance, schedules, and vacation plans, and coordinate onboarding administrative requirements.
  • Liaise with Purchasing, Receiving, Engineering, Human Resources, and other departments regarding supplier documentation, maintenance issues, medical requirements, and training.
  • Follow all company and property policies and procedures, maintain confidentiality, and report accidents, unsafe conditions, and food safety incidents.
  • Prepare accurate reports, emails, and meeting minutes, communicating food safety and hygiene requirements effectively.
  • Develop and maintain positive working relationships, supporting Culinary and Stewarding teams to achieve operational and hygiene standards.
  • Monitor departmental administrative processes for accuracy and compliance, assisting in identifying recurring hygiene issues and improvement opportunities.
  • Utilize Microsoft Word, Excel, PowerPoint, Outlook, and other property systems for electronic filing and data management.

Qualifications and Experience

  • High school diploma or equivalent with relevant experience in culinary administration, food safety, hygiene, or hospitality administration.
  • Alternatively, a 2-year degree from an accredited university in Hospitality Management, Culinary Arts, Food Science, Food Safety, or Business Administration.
  • Previous experience in a luxury hotel or resort environment is preferred.
  • HACCP, Food Safety, or Hygiene certification is preferred.

Work Environment

The role involves working closely with the Executive Chef, Culinary leaders, Stewarding, Purchasing, Receiving, Engineering, Human Resources, and other departments. The position requires moving through kitchens, receiving areas, storage rooms, and stewarding areas for inspections and follow-up. It may involve standing or walking for extended periods and using computers and office equipment for prolonged durations.

Physical Requirements

  • Ability to move, lift, carry, push, pull, and place objects of light weight as required for normal administrative duties.
  • Capability to stand or walk for extended periods.
  • Proficiency in using computers and office equipment for extended periods.
