About The Red Palace and the Commis Role

Boutique Group is seeking a dedicated Commis to join the team at The Red Palace in Riyadh. The Red Palace, originally built in 1943, has been meticulously reimagined as an ultra-luxury boutique hotel, blending Saudi Arabia’s heritage with contemporary sophistication. This full-time role contributes to delivering unparalleled service and culinary excellence within a historic and prestigious setting.

Key Responsibilities of a Commis

The Commis is responsible for essential kitchen operations, ensuring efficiency and adherence to culinary standards. This includes preparing and cooking ingredients for proper mise-en-place for the respective outlet, and organizing the assigned section to maximize productivity.

  • Organize and set up the assigned kitchen section efficiently to increase speed and maximize productivity.
  • Maintain the quality of food as per BG standard recipes in both à la carte and buffet set-ups.
  • Ensure all equipment is functioning correctly and serviced regularly.
  • Fill out Maintenance Request Forms and send them directly to Maintenance for all necessary repairs and servicing.
  • Report on duty punctually, wearing the correct uniform and name badge at all times.

Adherence to Quality and Safety Standards

A core aspect of this role involves upholding stringent health, safety, and food quality standards across all kitchen operations and back-of-the-house areas.

  • Demonstrate compliance with legislated health and safety requirements in the workplace.
  • Initiate immediate action to correct hazardous situations and notify relevant associates of potential danger.
  • Ensure associates maintain complete familiarity with safety, current first aid, and fire emergency procedures.
  • Encourage team members to notify any equipment or lighting failure immediately to expedite repairs/replacement.
  • Ensure a high level of cleanliness is maintained in all kitchens and back-of-the-house areas.
  • Insist on personal hygiene, cleanliness, and grooming standards.
  • Ensure compliance with food safety and sanitation standards, local health regulations, and industry best practices.
  • Establish and enforce standard operating procedures for food handling, storage, and preparation.

Guest Experience and Team Collaboration

The Commis contributes to a positive guest experience through proactive service and effective teamwork within the culinary department.

  • Act on potential client complaints and report them to appropriate personnel.
  • Attend regular briefings conducted by the Sous Chef to stay informed and contribute to decision-making.
  • Cooperate effectively with other sections and departments.
  • Anticipate client needs through observation and offer prompt, efficient service.
  • Ensure complaints and requests are handled with the aim of exceeding guests’ expectations.
  • Strive for a high level of product knowledge to explain services and facilities to clients as required.
  • Demonstrate effective verbal and non-verbal communication skills.
