About the Role: Chef De Cuisine (Lebanese Cuisine)

Shangri-La Hotel in Jeddah is seeking a Chef De Cuisine specializing in Lebanese Cuisine. This full-time position is responsible for the comprehensive operation of the kitchen, ensuring guest satisfaction, quality standards, and the profitability of the hotel. The role also involves maintaining high standards of hygiene and cleanliness to comply with food safety regulations.

Key Responsibilities

Oversee the consistency of various preparations within the cold kitchen to ensure product quality and adherence to standard recipes.
Place orders for products required for events and verify proper quality upon receipt.
Prepare all cold food items according to recipes, guidelines, and standards set by the Executive Chef or hotel standards.
Ensure that the assigned work area maintains appropriate levels of par stocks and supplies based on daily production sheets, daily menus, and banquet events.
Maintain all refrigeration, equipment, storage, and working areas in a clean and functional condition to comply with health department regulations.
Check and control proper product storage, including portion control, particularly for specific cuts of meat, to maintain product quality.
Delegate tasks and assist in preparing cold food items such as salads, sushi, cold cuts, and salad dressings.
Prepare daily requisitions for supplies and food items needed for production.
Prepare all dishes following established recipes and yield guides.

Qualifications and Experience

A minimum of 5-10 years of experience in a similar culinary role.
Demonstrated expertise in Lebanese Cuisine.
Strong understanding of kitchen operations, food safety, and hygiene standards.

Work Environment

This is a full-time position based in Jeddah, Saudi Arabia, within the dynamic environment of the Shangri-La Hotel. The role requires a commitment to maintaining high standards of quality and service in a professional kitchen setting.
