About the Night Baker Role

Sheraton Hotels & Resorts is seeking a skilled Night Baker (Chef de Partie) to join our culinary team in Riyadh. This full-time position requires a dedicated individual with 2-5 years of relevant experience to contribute to our high standards of food preparation and presentation.

Core Responsibilities

The Night Baker will be responsible for the end-to-end preparation of a variety of breads and pastries. This includes the meticulous preparation of doughs and fillings, managing the proofing process, baking to perfection, and applying appropriate decorations. The role involves adhering strictly to recipes, quality standards, and presentation guidelines, utilizing baking and measuring tools safely and effectively.

Daily Operations and Quality Assurance

Key duties include reviewing the daily production sheet to understand the variety of baked goods required. The incumbent will prepare and cook food according to established recipes, quality, and presentation standards, and food preparation checklists. Continuous monitoring of food quality and portion sizes throughout the shift is essential. This role also requires ensuring correct temperatures of kitchen appliances and food, reporting any issues to management promptly.

Food Safety and Compliance

Maintaining kitchen logs for food safety program compliance is a critical responsibility. The Night Baker must follow and ensure adherence to all food safety handling policies and procedures, including personal hygiene standards. Keeping the Chef informed of excess food items for planning daily specials is also part of the role. All company policies and procedures, including safety and security protocols, must be followed, with accidents, injuries, and unsafe working conditions reported to management.

Qualifications and Experience

Candidates should possess a degree from a Technical, Trade, or Vocational School. A minimum of 2 years of related work experience is required. While this role does not require supervisory experience, a strong understanding of baking principles and practices is essential. The ability to perform physical tasks, including moving, lifting, carrying, pushing, and pulling objects weighing up to 25 pounds without assistance, is necessary. The role also involves working over various surfaces and performing tasks that require reaching, bending, twisting, pulling, and stooping, as well as standing, sitting, or walking for extended periods.

Professional Conduct and Teamwork

Maintaining a clean and professional uniform and personal appearance is expected. Confidentiality of proprietary information and protection of company assets are paramount. Communication should be clear and professional, and telephone etiquette must be maintained. Developing and maintaining positive working relationships with colleagues and supporting team goals through tact and respect are key aspects of this role. Complying with quality expectations and standards is mandatory.
