About Rotana Hotels

Rotana Hotels is seeking a dedicated and skilled Sous Chef to join our team in Mecca, Makkah, Saudi Arabia. This is a full-time position for a professional committed to culinary excellence and operational efficiency within a hotel environment.

Role Overview

As a Sous Chef, you will be responsible for ensuring the smooth operation of the main or outlet kitchen. This includes maintaining high standards of quality and presentation, adhering to standardized menu guidelines, and contributing to the ongoing training and development of kitchen staff. The role emphasizes delivering exceptional service and culinary solutions to guests.

Key Responsibilities

• Supervise the main or outlet kitchen in the preparation and presentation of all food items, aligning with hotel SOPs and standardized menu guidelines.
• Monitor production standards regularly to ensure the highest level of quality is consistently met.
• Oversee all aspects related to controlling the hotel’s food cost.
• Participate in developing concept ideas and menus for special events and functions, encouraging and utilizing employee input where practical.
• Ensure HACCP standards are implemented and maintain appropriate hygiene standards as per Municipality requirements at all times.
• Conduct consistent on-the-job training sessions for culinary colleagues and promote health and safety practices.

Qualifications and Experience

• Completion of a professional kitchen apprenticeship or a recognized chef's training course.
• At least three years of experience in quality culinary establishments.
• Demonstrated excellent culinary skills.
• A proven track record of knowledge in food preparation, presentation, and preservation.
