About the Role
Kempinski Hotels is seeking a Chef de Cuisine to lead culinary operations for a Mediterranean/Greek restaurant in Al Madinah, Saudi Arabia, with a focus on locations in Yanbu and Medina. This is a full-time position requiring over 10 years of experience in a similar capacity.
Role Overview and Responsibilities
Reporting to the Executive Sous Chef, the Chef de Cuisine will be instrumental in overseeing all aspects of food production and stewarding operations. This role involves assisting in the organization of special events and food promotions, and contributing to the development and implementation of training plans for kitchen and food and beverage staff in accordance with Kempinski guidelines. The Chef de Cuisine will also assume the duties of the Executive Sous Chef in their absence, ensuring the smooth operation of the culinary department.
- Supervise the preparation and presentation of all food items, adhering to hotel standards and menu guidelines.
- Assist in developing and maintaining operational manuals for all food production and stewarding sections.
- Contribute to recipe development and maintain accurate costing for all dishes.
- Ensure a hygienic kitchen environment and maintain personal hygiene standards.
- Oversee the implementation of departmental standards and procedures.
- Ensure training needs analysis is conducted and relevant training programs are implemented for kitchen staff.
- Provide input for performance appraisal discussions and coach, counsel, and discipline staff to enhance performance.
- Demonstrate awareness and adherence to OH&S policies, procedures, and relevant legislation, ensuring safe operating practices.
- Be familiar with property safety, first aid, and emergency procedures.
- Initiate action to correct hazardous situations and report potential dangers.
- Log security incidents and accidents as per hotel requirements.
- Implement and practice HACCP principles.
Qualifications and Experience
This role requires a minimum of 10 years of relevant professional experience. Previous experience in Mediterranean/Greek restaurants is a mandatory requirement for this position.
Work Environment and Location
The position is based in Al Madinah, Saudi Arabia, with operational responsibilities potentially covering Yanbu and Medina. This is a full-time role within the hospitality sector.
Additional Information
Additional responsibilities and tasks may be assigned to the Chef de Cuisine based on the evolving needs of the business and the hotel.
