Job Description

About the Role

Kempinski Hotel in Yanbu is seeking a dedicated Chef de Cuisine to lead its Mediterranean/Greek restaurant operations. This full-time position requires a professional with a minimum of 5 years of experience in culinary leadership, specifically within Mediterranean and Greek cuisine.

Key Responsibilities

Reporting to the Executive Sous Chef, the Chef de Cuisine will be instrumental in directing all facets of food production and stewarding operations. This includes:

  • Assisting in the organization of special events and food promotions.
  • Supporting the Executive Sous Chef in developing and implementing training plans for Food Production and other Food and Beverage employees, adhering to Kempinski guidelines.
  • Assuming the duties of the Executive Sous Chef in their absence.
  • Contributing to the development and maintenance of updated operations manuals for all Food Production and Stewarding sections.
  • Assisting in recipe development and maintaining accurate costing for all dishes.
  • Supervising the preparation and presentation of all food items to meet hotel standards and menu guidelines.
  • Ensuring a hygienic kitchen environment and maintaining personal hygiene standards.
  • Overseeing the implementation of departmental standards and procedures.
  • Conducting training needs analysis for kitchen staff and implementing appropriate training programs.
  • Providing input for performance appraisals and engaging in coaching, counseling, and discipline to enhance staff performance.
  • Ensuring adherence to OH&S policies, procedures, and legislation, and promoting safe work practices among direct reports.
  • Familiarizing oneself with property safety, first aid, and emergency procedures.
  • Operating equipment safely and reporting potential hazards.
  • Logging security incidents and accidents as required.
  • Implementing and practicing HACCP principles.

Qualifications and Experience

The ideal candidate will possess:

  • A minimum of 5 years of experience in a culinary leadership role.
  • Proven experience and expertise in Mediterranean and Greek cuisine is essential.
  • Experience in a hotel environment is preferred.

Work Environment and Location

This is a full-time position based at the Kempinski Hotel in Yanbu. The role involves working within a dynamic kitchen environment dedicated to providing high-quality culinary experiences.
