About the Role
Shangri-La Group is seeking a Chef De Cuisine to join its team at Shangri-La Jeddah, a luxury hotel located on the new Jeddah Waterfront along the Red Sea. This full-time position offers an opportunity to contribute to an innovative dining environment in Makkah, with proximity to Jeddah.
Role Overview
The Chef De Cuisine will oversee the comprehensive operations of the kitchen. The primary objective is to ensure guest satisfaction and maintain high-quality standards while optimizing profitability for the hotel. A key aspect of this role involves maintaining stringent hygiene and cleanliness throughout the kitchen to uphold food safety standards.
Key Responsibilities
- Oversee the consistency of various preparations within the cold kitchen, ensuring product quality and adherence to standard recipes.
- Place orders for necessary products for events and verify their quality upon receipt.
- Prepare all cold food items in accordance with recipes, guidelines, and standards set by the Executive Chef or hotel standards.
- Ensure assigned work areas maintain proper par stock levels and supplies as per daily production sheets, menus, and banquet event orders.
- Maintain all refrigeration, equipment, storage, and working areas in a clean and functional condition to comply with health department regulations.
- Check and control the proper storage of products, focusing on portion control, particularly for specific meat cuts, to maintain product quality.
- Delegate tasks and assist in the preparation of cold food items such as salads, sushi, cold cuts, and salad dressings.
- Prepare daily requisitions for supplies and food items required for production.
- Prepare all dishes following established recipes and yield guides.
Qualifications and Experience
- A minimum of 5 to 10 years of solid experience as a Chef De Cuisine, preferably within hotel environments.
- Demonstrated ability to coach, train, and develop culinary team members.
- Fluency in English is required.
Required Skills
Candidates must possess strong leadership capabilities, be self-motivated, and exhibit excellent communication skills to effectively manage kitchen operations and team dynamics.
Work Location
This role is based in Makkah, Saudi Arabia, with the hotel situated in Jeddah.
