About the Role

Shangri-La Hotel in Jeddah is seeking a Chef De Cuisine to lead kitchen operations. This full-time position requires a professional with over 5 years of experience to ensure high standards of quality, guest satisfaction, and operational efficiency.

Core Responsibilities

The Chef De Cuisine will be responsible for the overall management of the kitchen, focusing on maintaining exceptional quality and profitability. Key duties include overseeing the consistency of food preparations, particularly within the cold kitchen, and ensuring adherence to standard recipes and hotel guidelines. This role involves managing product orders, ensuring quality upon receipt, and preparing all dishes according to established recipes and yield guides.

Maintaining impeccable hygiene and food safety standards is paramount. The Chef De Cuisine will ensure all work areas, equipment, and storage facilities are kept clean and in proper working condition, complying with all health department regulations. This includes diligent checking and control of product storage, with a specific focus on portion control for items like meat cuts to preserve product quality.

Operational Duties

  • Overseeing the consistency of various preparations within the cold kitchen to ensure product quality and adherence to standard recipes.
  • Placing orders for necessary products for events and verifying their quality upon delivery.
  • Ensuring assigned work areas are stocked with appropriate par levels of supplies based on daily production sheets, menus, and banquet events.
  • Delegating tasks and assisting in the preparation of cold food items such as salads, sushi, cold cuts, and salad dressings.
  • Preparing daily requisitions for supplies and food items required for production.

Qualifications and Experience

  • A minimum of 5 years of experience as a Chef De Cuisine, preferably within hotel environments.
  • Proven experience in a leadership role with the ability to coach, train, and develop culinary team members.
  • Fluency in English is required.

Required Skills

Candidates must possess strong leadership capabilities, be self-motivated, and demonstrate excellent communication skills to effectively manage the culinary team and collaborate with other hotel departments.

This full-time position is based at the Shangri-La Hotel in Jeddah.
