About Shangri-La Jeddah

The Role of Chef De Cuisine

Shangri-La Jeddah is seeking a Chef De Cuisine to oversee the overall operation of the kitchen. This full-time role, based in Jeddah, is critical for ensuring maximum guest satisfaction and quality while maintaining the hotel's profitability. The Chef De Cuisine is also responsible for upholding hygiene and cleanliness standards throughout the kitchen to comply with food safety regulations.

Key Responsibilities

  • Oversee the consistency of various preparations within the cold kitchen, ensuring product quality and adherence to standard recipes.
  • Place orders for products required for events and verify proper quality upon receipt.
  • Prepare all cold food items according to recipes, guidelines, and standards set by the Executive Chef or hotel.
  • Ensure assigned work areas maintain appropriate levels of par stocks and supplies based on daily production sheets, menus, and banquet events.
  • Maintain cleanliness and working condition of all refrigeration, equipment, storage, and work areas to comply with health department regulations.
  • Monitor and control proper product storage and portion control, particularly for specific meat cuts, to maintain product quality.
  • Delegate and assist in preparing cold food items such as salads, sushi, cold cuts, and salad dressings.
  • Prepare daily requisitions for supplies and food items needed for production.
  • Prepare all dishes in accordance with established recipes and yield guides.

Candidate Profile and Requirements

  • Solid experience as a Chef De Cuisine in hotel environments, with 5-10 years of relevant experience.
  • Demonstrated leadership ability, including coaching, training, and developing team members.
  • Fluency in English is required.
  • Possession of strong leadership, self-motivation, and excellent communication skills.
