This full-time position for a Food and Beverage Manager is based in Umluj, Tabuk, Saudi Arabia, and requires 5-10 years of experience. The role involves designing, building, and leading the Food and Beverage program across all outlets at Clinique La Prairie AMAALA.

Role Purpose and Context

The Food and Beverage Manager serves as the senior manager on duty for the F&B service team. Given that no alcohol is served on-site, this role carries significant expertise and authority in non-alcoholic beverage programs. The manager ensures that all food and beverage offerings, from tea and water to functional and fermented drinks, align with the guest's longevity journey, are executed to an ultra-luxury standard, and are commercially controlled. This position acts as a key brand ambassador, embodying values of excellence, discretion, innovation, and premium service, and works closely with the Executive Head Chef, Nutrition team, and CLP Headquarters to ensure alignment with corporate standards and the CLP Longevity Handbook.

Key Responsibilities

  • Design, develop, and manage the food and beverage program for the All Day Dining bar, Juice Bar, and Tea Lounge, based on the CLP Longevity Bar Handbook and adapted to the AMAALA context.
  • Create signature non-alcoholic beverages and pairings, including functional shots, infused waters, fermented drinks, mocktails, and smoothies.
  • Develop a distinctive tea program combining international wellness teas with Saudi and Arabian herbal heritage.
  • Curate water and coffee programs, including premium water selection and barista standards.
  • Extend the food and beverage program to all F&B touchpoints without dedicated beverage staff, such as Room Service, Beach Club, and in-room amenities.
  • Build the storytelling for each food and beverage item, integrating local and regional ingredients where appropriate and validated.
  • Ensure all food and beverage offerings are compatible with CLP programs and translate into clear, appealing options for guests, validated by the Nutrition team.
  • Identify, source, and qualify specialist suppliers in coordination with Procurement, managing regional and international supply plans.
  • Line manage F&B Supervisors, setting objectives, conducting performance reviews, and supporting their development.
  • Act as manager on duty when no Supervisor is present and cover one Supervisor shift per week, deputizing for the Director of Food & Beverage in their absence.
  • Build and deliver the beverage training curriculum for the service team.
  • Write and maintain food and beverage SOPs and standard recipe cards, ensuring compliance with brand standards and LQA requirements.
  • Oversee consistent execution across all outlets through floor presence, tastings, and quality audits, ensuring compliance with HACCP and food safety systems.
  • Deliver the food and beverage program in line with the pre-opening critical path, including concept, recipes, suppliers, OS&E, SOPs, and training.
  • Design food and beverage rituals across the guest journey and engage personally with guests to anticipate preferences.
  • Prepare and manage the food and beverage budget, monitor costs, and ensure accurate stock control and monthly inventories.

Qualifications and Experience

  • 5-10 years of experience in Food and Beverage management.
  • Demonstrated expertise in designing and leading comprehensive F&B programs, particularly in a luxury hospitality setting.
  • Experience with non-alcoholic beverage programs, including functional and fermented drinks.
  • Proven ability to manage supplier relationships and complex supply chain logistics.
  • Strong leadership skills with experience in team management and training.
  • Understanding of operational excellence, including SOP development, quality audits, and food safety standards (HACCP).
  • Experience in pre-opening phases of hospitality establishments is beneficial.
  • Financial acumen for budget management, cost control, and inventory.
