About the Role

Silversea is seeking a dedicated and experienced Sous Chef to join its culinary team. This contract position is based in Saudi Arabia and offers an opportunity to contribute to a high-standard dining experience within a prestigious environment.

Role Purpose and Scope

The Sous Chef plays a pivotal role in ensuring culinary excellence and operational efficiency within an assigned outlet. This position involves leading kitchen staff, maintaining stringent quality controls, and upholding the highest standards of guest satisfaction and public health compliance.

Key Responsibilities

Oversee daily food preparation, menu planning, and station execution, ensuring strict adherence to recipes, portion controls, and immaculate presentation.
Manage, schedule, and train Chef de Parties and Cooks, fostering a positive, collaborative, and high-performance kitchen environment.
Coordinate special dietary requirements and allergies, and actively monitor guest satisfaction in the dining room, handling feedback with sincere hospitality.
Maintain flawless sanitation standards and ensure 100% readiness for all Public Health inspections, including meticulous log-keeping for temperatures and pest management.
Manage inventory, minimize food waste and breakage, and monitor labor hours in strict compliance with ILO and MLC maritime regulations.

Qualifications and Experience

A minimum of 2 years of experience as a Sous Chef in a Michelin-starred or Relais & Châteaux property.
Must be physically and medically fit for sea service.
Demonstrated high moral integrity.
