About the Role

Catrion Group is seeking a dedicated and experienced Sous Chef to join its culinary team in Riyadh. This full-time role is central to overseeing comprehensive kitchen operations, ensuring the highest standards of food production, and supporting various catering and restaurant services. The Sous Chef will play a crucial role in supervising daily production, maintaining stringent quality and hygiene standards, and assisting the Head Chef with planning and inventory management.

Key Responsibilities

  • Oversee and participate in the daily production of hot food products, ensuring adherence to customer demands for presentation and development.
  • Manage production for Airline Catering, Company Restaurants, and outside party services, providing support for Staff services as required.
  • Ensure all meals are produced in strict accordance with Saudia Catering Standards and individual customer specifications.
  • Collaborate closely with Pre-Preparation, Cold Kitchen, Bakery, and other relevant departments to ensure seamless kitchen operations.
  • Formulate production lists and daily flight orders for all customers.
  • Assist the Head Chef in daily production planning, including ordering from various stores and generating production lists for SAUDIA & Foreign Airlines.

Operational Management and Quality Assurance

  • Conduct full shift checks with written documentation as per Head Chef guidelines and ensure all food production meets operational deadlines.
  • Monitor daily *** checks and maintain comprehensive documentation for records.
  • Ensure maximum productivity within the shift and facilitate smooth operation during shift changes.
  • Manage month-end stocktaking and implement procedures to control wastage, breakages, and pilferage within the section.
  • Ensure a cost-efficient operation through optimum utilization of manpower, equipment, and facilities within the allocated budget.
  • Control staff performance, manage overtime, and assist with personnel planning, rosters, and vacation schedules.
  • Maintain high staff morale and motivation, monitoring punctuality, absenteeism, and personal appearance.
  • Continuously review existing procedures and recommend improvements to increase productivity and efficiency within the section.

Compliance and Safety Standards

  • Ensure all staff adhere to personal hygiene standards and attend required hygiene courses.
  • Implement and enforce proper hygiene and quality control measures to guarantee safe food delivery and a safe working environment.
  • Ensure full understanding and strict adherence to the Company's hygiene, quality, and temperature control standards by all staff.
  • Adhere to all Cybersecurity policies and procedures, including data classification, intellectual property rights, and protection of user devices, internet, software, systems, and email.
  • Report Cybersecurity incidents and comply with the acceptable use policy for company information and technical assets.

Qualifications and Experience

Candidates for the Sous Chef position should possess 5 to 10 years of progressive experience in kitchen operations, preferably within a large-scale catering or restaurant environment. The role requires demonstrated ability to supervise production, maintain stringent quality standards, and manage kitchen staff effectively. A strong understanding of food safety, hygiene regulations, and inventory management is essential, along with proficiency in planning, organizing, and executing culinary tasks under pressure.
