About the Role

Hilton is seeking a Chef De Partie to join its culinary team in Jeddah, Makkah, Saudi Arabia. This full-time role involves overseeing a section of the kitchen, ensuring high standards of food preparation, quality, and service delivery, particularly within a luxury hotel environment.

Key Responsibilities

• Prepare and cook all à la carte menu items according to established standard recipes.
• Ensure consistency in taste, portioning, presentation, and overall quality of dishes.
• Maintain mise en place before each service period and prepare food according to guest dietary requirements and special requests.
• Coordinate with the In-Room Dining (IRD) service team to ensure timely order delivery and minimize waiting times.
• Prioritize orders based on service timing and manage high-volume periods efficiently.
• Ensure all orders leaving the kitchen are accurate and attractively presented, served at the correct temperature.
• Monitor food quality throughout the preparation and service stages.

Operational Standards and Controls

• Inspect all dishes before service to ensure adherence to Hilton brand standards.
• Maintain food freshness, ensure proper storage and labeling, and monitor expiry dates using FIFO procedures.
• Adhere to HACCP standards, maintain excellent personal hygiene, and ensure overall kitchen cleanliness.
• Prevent cross-contamination, maintain temperature logs, and report maintenance issues promptly.
• Control food waste, monitor stock levels, and assist in monthly inventory counts.
• Follow portion control guidelines and minimize unnecessary operational costs.
• Follow fire safety procedures, wear required Personal Protective Equipment (PPE), and report accidents immediately.
• Operate kitchen equipment safely and complete daily kitchen checklists and production records.
• Report daily operational issues and attend kitchen meetings as required.

Team Leadership and Communication

• Supervise Commis Chefs and Kitchen Assistants, providing training to junior chefs.
• Monitor staff performance and ensure effective teamwork during service periods.
• Assist with the onboarding process for new culinary employees.
• Communicate effectively with IRD Supervisors, the Restaurant Team, Stewarding, Purchasing, Receiving, and the Executive Chef.

Required Qualifications

• A Diploma or Degree in Culinary Arts is preferred.
• Minimum of 4–6 years of culinary experience, with at least 2 years specifically as a Chef de Partie in luxury hotels.
• Strong experience in à la carte food preparation is essential.
• Experience in In-Room Dining operations is preferred.
• Prior experience with Hilton is considered an advantage.
