Chief Steward

About the Role

Delta Limited Co. is seeking an experienced Chief Steward to lead the stewarding operations for its large-scale catering business in Riyadh, Saudi Arabia. This full-time role involves ensuring kitchens, equipment, and service ware meet the required cleanliness and safety standards set by Saudi authorities and clients.

Key Responsibilities

• Lead, schedule, and train the stewarding team, including manpower planning for daily service, banquets, and large events.
• Oversee dishwashing, pot-washing, kitchen cleaning, and deep-cleaning programs according to a documented schedule.
• Ensure compliance with HACCP, SFDA, and Saudi Municipality (Baladi) requirements, and prepare the team for audits and client inspections.
• Control cleaning chemicals and dosing, manage waste handling, and coordinate with pest control contractors.
• Manage stock and losses of china, glassware, cutlery, pots, and cleaning supplies, and report on breakage and costs.
• Inspect and maintain dishwashing machines and stewarding equipment, reporting faults promptly.
• Collaborate with the Executive Chef, Operations, and Procurement teams to support the mobilization of new sites and large functions.
• Enforce safety protocols, proper PPE use, and personal hygiene standards across the team.

Required Qualifications

• A minimum of 7 years of experience in stewarding, with at least 3 years in a Chief, Head, or Senior Steward role.
• Proven experience in large-scale catering operations, preferably with companies such as Sodexo, Saudi Catering, Nesma, or similar.
• Experience managing large teams in operations serving thousands of meals per day.
• Valid HACCP and food safety certification (Level 2 or 3 preferred).
• Good knowledge of Saudi food safety and hygiene regulations.

Skills and Attributes

• Strong leadership, organizational, and reporting skills.
• Ability to work shifts, weekends, and during peak periods as required by operational needs.

Experience Level

Candidates should possess 5-10 years of relevant experience for this role.
