Boutique Group is seeking a Demi Chef de Partie to join the team at The Red Palace in Riyadh. The Red Palace, a landmark originally built in 1943, has been reimagined as an ultra-luxury boutique hotel, blending timeless elegance with contemporary sophistication. It offers an exclusive experience into the Kingdom’s past, featuring meticulously restored architecture, curated cultural experiences, and dedicated service, honoring its legacy while delivering a modern interpretation of luxury.

The Role of Demi Chef de Partie

As a Demi Chef de Partie, you will support the Chef de Partie in maintaining the highest product standards and contributing to profitability within the kitchen and other designated areas. This full-time role involves supervising the work of commis chefs, ensuring fairness, and providing clear instruction on specific assigned duties to all associates under your supervision.

Key Responsibilities

  • Assume full responsibility for the outlet in the absence of the Sous Chef.
  • Inspect food stores, implement proper storage practices to avoid wastage, and follow FIFO principles.
  • Oversee the entire section’s operation to ensure adherence to correct procedures in daily food preparation.
  • Monitor food quality as per Leela standard recipes in à la carte and buffet setups.
  • Ensure all staff possess a high level of product knowledge to explain services and facilities to clients.
  • Ensure all equipment is functioning correctly and serviced regularly, encouraging immediate notification of any equipment or lighting failure.
  • Maintain high levels of cleanliness in all kitchens and heart-of-house areas, insisting on personal hygiene, cleanliness, and grooming.
  • Provide recommendations for promotions within the department and implement opportunities for quality team building.
  • Attend regular briefings conducted by the Sous Chef to involve associates in aspects of decision-making, encouraging creativity and initiative.
  • Ensure all associates under supervision are fully aware of hotel rules and that these rules are implemented to the highest standards, with necessary disciplinary action enforced for rule abuse.

Commitment to Standards and Safety

  • Ensure compliance with food safety and sanitation standards, local health regulations, and industry best practices.
  • Establish and enforce standard operating procedures for food handling, storage, and preparation.
  • Possess a complete understanding of Leela environment, safety, and hygiene policies.
  • Demonstrate compliance with legislated health and safety requirements in the workplace.
  • Initiate immediate action to correct hazardous situations and notify relevant associates of potential danger.
  • Ensure associates maintain complete familiarity with safety, current first aid, and fire emergency procedures.
