About the Executive Chef Role

Courtyard by Marriott in Riyadh, Saudi Arabia, is seeking an experienced Executive Chef to lead and manage all daily kitchen operations. This full-time position is accountable for the overall success of culinary functions, focusing on delivering consistent, high-quality food products while maximizing financial performance and ensuring guest and employee satisfaction.

Key Responsibilities

• Lead the kitchen management team and provide direction for all day-to-day culinary operations.
• Oversee all food preparation areas, including banquets, room service, restaurants, bar/lounge, and employee cafeteria, as well as support areas like the dish room and purchasing.
• Manage department controllable expenses, including food cost, supplies, uniforms, and equipment, and participate in the budgeting process.
• Ensure property policies are administered fairly and consistently, reviewing staffing levels to meet guest service, operational needs, and financial objectives.
• Establish and maintain open, collaborative relationships with employees, fostering mutual trust and cooperation within the team.

Culinary Standards and Guest Experience

• Provide direction for menu development and monitor the quality of raw and cooked food products to ensure standards are met.
• Determine food presentation, create decorative food displays, and recognize superior quality products, presentations, and flavors.
• Ensure compliance with food handling and sanitation standards, including proper handling and temperature control of all food products.
• Maintain purchasing, receiving, and food storage standards, ensuring employees hold required food handling and sanitation certifications.
• Prepare and cook various types of food, either on a regular basis or for special guests and functions.
• Display leadership in guest hospitality, exemplify excellent customer service, and create a positive atmosphere for guest relations.
• Interact with guests to obtain feedback on product quality and service levels, and effectively respond to and handle guest problems and complaints.

Team Leadership and Development

• Provide guidance and direction to subordinates, including setting performance standards and monitoring performance.
• Identify developmental needs of others and provide coaching, mentoring, or training to improve knowledge and skills, particularly in cooking fundamentals and plate presentations.
• Administer the performance appraisal process for direct report managers and ensure employees are treated fairly and equitably.
• Collaborate with the Banquet Chef and Catering department on training regarding food knowledge and menu composition.
• Manage employee progressive discipline procedures for areas of responsibility, ensuring documentation aligns with Standard and Local Operating Procedures (SOPs and LSOPs).

Operational Oversight and Strategic Input

• Communicate the importance of safety procedures, detailing codes, ensuring employee understanding, and monitoring related processes.
• Know and implement the brand's safety standards across all kitchen operations.
• Provide information to executive teams, managers, supervisors, co-workers, and subordinates through various communication channels.
• Analyze information and evaluate results to choose the best solutions and solve operational problems effectively.

Qualifications and Work Environment

The ideal candidate for this Executive Chef position will possess 5-10 years of experience in a similar culinary leadership role.
