The Role of Sushi Head Chef

Zuma Restaurants is seeking a Sushi Head Chef to lead the sushi operation in Riyadh, Saudi Arabia. This full-time role is central to the guest experience, focusing on creating memorable moments and maintaining the high standards that define the Zuma dining experience. The Sushi Head Chef embodies the restaurant's vibrant energy and contributes to its core values of honoring mastery, supporting team members, and embracing positivity.

Key Responsibilities

• Lead and oversee the sushi operation, ensuring consistent high standards of food quality, presentation, and taste during all services.
• Maintain sufficient levels of sushi mise en place, fish preparation, and kitchen preparation to ensure smooth service flow.
• Lead, mentor, and develop the sushi team through training, guidance, and support to meet and exceed Zuma standards.
• Take overall responsibility for the performance of the sushi section, ensuring consistent dish preparation and delivery to required standards.
• Ensure correct handling, preparation, and storage of fish and all sushi ingredients, maintaining freshness, quality, and food safety.
• Collaborate with senior management to evaluate guest feedback and identify opportunities for continuous improvement of the sushi offering and dining experience.
• Manage and monitor sushi section costs, stock levels, product quality, and waste to ensure commercial effectiveness.
• Ensure consistent adherence to all health, safety, hygiene, and food safety standards within the sushi operation.
• Work with the senior culinary team to develop and refine the sushi offering, incorporating seasonal ingredients, traditional Japanese techniques, and innovative Japanese-inspired concepts.

Candidate Requirements

• A minimum of 5-10 years of experience in a relevant culinary role.
• Demonstrated ability to lead and manage a sushi operation in a high-standard environment.
• Strong understanding of Japanese culinary techniques and traditions.
• Commitment to maintaining exceptional food quality, consistency, and presentation.
• Proficiency in managing kitchen costs, stock, and waste.
• Thorough knowledge of health, safety, hygiene, and food safety standards.
