About the Head Chef Role

Apparel Group is seeking a Head Chef for a full-time position in Riyadh. This role is responsible for overseeing kitchen operations to ensure high standards of food preparation, presentation, and cleanliness. The ideal candidate will have 5-10 years of experience in a similar capacity.

Kitchen Operations Oversight

The Head Chef will supervise kitchen staff during shifts, ensuring adherence to food preparation, organization, and presentation standards. This includes maintaining kitchen equipment in proper working order, initiating maintenance requests, and training staff according to established programs. The role also focuses on minimizing waste and ensuring portion control to meet food cost targets. The Head Chef will contribute to creative selling, merchandising, and presentation ideas, and assist in developing new menus and recipes.

Inventory and Supplier Management

Daily ordering of fresh and dry goods is essential to prevent spoilage and maintain quality and freshness, ensuring stocks are kept at Par Levels. The Head Chef will liaise with management regarding food preparation, presentation, special menus, and seasonal specialties. Collaboration with the Sous Chef will determine the quality of kitchen supplies. The role involves minimizing Food Cost and maintaining it below identified levels and percentages as set by the Managing Partner.

Health, Safety, and Hygiene Standards

Maintaining the required standard of operational hygiene according to cleaning rotas at all times is a key responsibility. The Head Chef must be aware of and ensure direct reports adhere to restaurant policies and procedures related to health, hygiene, and fire life safety. Familiarity with emergency exits and evacuation procedures is also required.

Financial Management and Budget Control

With the assistance of the Restaurant Manager, the Head Chef will work towards achieving departmental budgets by monitoring and controlling operations, considering restaurant and expenditure. This includes ongoing control and analysis of departmental costs to ensure performance against budget, implementing corrective measures as necessary to achieve positive business results.

General Conduct and Compliance

The Head Chef is expected to comply with the company's corporate code of conduct and familiarize themselves with company values, modeling desired behaviors. This role also involves performing tasks as directed by management in pursuit of business goals. Attendance at scheduled weekly meetings, briefings, and training sessions is also required.
