Role Summary

The Junior Pastry Sous Chef supports the Head Pastry Chef in managing the pastry section. This involves maintaining quality standards, contributing to team development, and leading the section when required. The role is responsible for daily pastry production, from viennoiserie to plated desserts, ensuring consistency, cost awareness, and adherence to Le Café LPM standards.

Key Responsibilities

• Execute classic and contemporary pastry techniques with precision and attention to presentation.
• Participate in motivating and developing the pastry team, maintaining discipline during service.
• Lead the pastry section effectively in the absence of the Head Pastry Chef.
• Plan daily production, monitor shelf life, and ensure adherence to FIFO (First-In, First-Out) and labeling procedures.
• Ensure all freezing and defrosting procedures are followed consistently.
• Verify that every pastry item meets established standards for taste, texture, and presentation.
• Maintain a clean, safe, and compliant pastry section.
• Monitor stock levels, manage portion control, and actively work to reduce waste.
• Maintain high quality standards while remaining mindful of cost efficiency.

Reporting Structure

This position reports to the Head Chef / Head Pastry Chef and is part of the Back of House department. Flexibility is an integral part of the team culture; employees may be requested to support other departments as business needs dictate.

Candidates should have 2-5 years of experience in a relevant pastry role. This full-time position is located in Al Khobar, Eastern Province.
