About the Role
Sheraton Hotels & Resorts is seeking a Director of Food & Beverage to lead the culinary and beverage operations in Medina. This full-time position requires 5-10 years of experience and offers the opportunity to drive strategic business initiatives within a renowned hospitality brand.
Operational Leadership and Strategy
The Director of Food & Beverage serves as the strategic business leader for the property’s food and beverage and culinary operations, encompassing restaurants, bars, room service, and banquets/catering where applicable. This role is responsible for developing and implementing departmental strategies, ensuring alignment with brand service standards and initiatives. The focus is on meeting the needs of the brand’s target customers, enhancing employee satisfaction, and maximizing the financial performance of the department through the delivery of products and services that meet or exceed expectations.
Financial Management and Goal Setting
This position involves the development and management of the Food and Beverage budget. Key responsibilities include reviewing financial reports to assess performance against budget, making recommendations for capital expenditures on equipment and renovations, and working with the leadership team to identify areas of concern and develop strategies for financial improvement. The role also entails setting challenging yet achievable operational and performance goals, monitoring sales to ensure revenue targets are met or exceeded, and ensuring adherence to cash and liquor control policies. Maintaining profit margins while ensuring guest and employee satisfaction is a core objective.
Team Leadership and Development
Leading the Food and Beverage/Culinary team requires strong interpersonal and communication skills to influence and encourage others, advocating for sound financial and business decisions with integrity. The role involves building trust, respect, and cooperation among team members, serving as a role model, and achieving departmental goals. Identifying opportunities to increase profits through process improvement and innovation is essential. Regular communication across all food and beverage areas, establishing collaborative relationships with direct reports and the wider team, and developing an operating strategy aligned with the brand’s business strategy are critical. This includes identifying developmental needs of staff and providing coaching and mentorship.
Customer Service Excellence
Ensuring exceptional customer service is paramount. This involves delivering services that exceed customer expectations to drive satisfaction and retention. The role requires improving service by understanding guest needs, providing guidance, feedback, and coaching to employees. Reviewing guest feedback from comment cards and satisfaction results, identifying areas for improvement, and taking appropriate corrective action are key duties. Empowering employees to provide excellent guest service and maintaining a balance between profit and service satisfaction are also important aspects of this function.
Human Resources Management
The Director of Food & Beverage provides guidance and direction to subordinates, setting performance standards and monitoring execution. This includes coaching the food and beverage leadership team on managing wages, costs, and controllable expenses. Hiring individuals with strong functional expertise, creativity, and leadership skills is crucial to meet business needs. Setting clear goals and expectations for direct reports through the performance review process and ensuring accountability are also key responsibilities. The role requires addressing issues with Human Resources as necessary and ensuring fair and equitable treatment of all employees.
Additional Responsibilities
Additional duties include informing executives, peers, and subordinates of relevant information in a timely manner, and providing information through various communication channels. Analyzing information and evaluating results to solve problems effectively is required. This role also involves estimating consumption of food, liquor, and other beverages to anticipate purchasing needs, and ordering and purchasing necessary equipment and supplies.
