The Role: Sous Chef - Oriental

We are seeking a skilled and dedicated Sous Chef - Oriental to join our full-time culinary team in Makkah. This role is crucial for overseeing the preparation and presentation of Oriental cuisine, ensuring adherence to the hotel's operational standards and guest satisfaction.

Key Responsibilities

• Supervise the main or outlet kitchen in the preparation and presentation of all food items, ensuring compliance with the hotel’s Standard Operating Procedures (SOPs) and standardized menu guidelines.
• Monitor regular production standards to consistently achieve the highest level of food quality.
• Oversee all aspects related to the control of the hotel’s food cost, implementing efficient management practices.
• Participate in the drafting of concept ideas and menus for special events and functions, encouraging and incorporating practical suggestions from the team.
• Ensure HACCP standards are rigorously implemented and maintain appropriate hygiene standards in accordance with Municipality requirements at all times.
• Conduct consistent on-the-job training sessions for culinary colleagues, promoting continuous skill development and adherence to health and safety protocols.

Candidate Profile and Requirements

The ideal candidate will be a passionate and dynamic Kitchen professional who is committed to delivering high standards of customer service and providing creative culinary solutions to guests.

• 2-5 years of proven experience in a similar culinary role, with a focus on Oriental cuisine.
• Demonstrated ability to supervise kitchen operations and maintain quality standards.
• Experience in food cost control and menu development.
• Strong understanding and application of HACCP and local hygiene regulations.
• Ability to conduct effective on-the-job training for culinary staff.
