About the Role

Leylaty Group is seeking a Chef de Partie Sushi to join the culinary team at KUURU in Riyadh. This full-time position requires 2-5 years of experience in a culinary role. The Chef de Partie is responsible for managing and operating an assigned kitchen section, ensuring the preparation and presentation of high-quality sushi dishes in accordance with KUURU's standards and recipes. The role demands strong culinary skills, attention to detail, and a commitment to maintaining consistent quality and efficiency throughout service.

Key Responsibilities

• Prepare and cook dishes according to KUURU's recipes, standards, and presentation guidelines.
• Manage the daily operations and organization of the assigned kitchen section.
• Ensure all ingredients are prepared, stored, and handled correctly.
• Maintain consistent food quality, taste, portion control, and presentation.
• Complete daily mise en place and ensure the section is fully prepared for service.
• Monitor the quality and freshness of ingredients before and during service.
• Coordinate with the Sous Chef and other kitchen sections to ensure smooth service.
• Assist and support Commis Chefs and junior team members with preparation and cooking techniques.
• Follow cooking methods, recipes, and portion specifications accurately.
• Maintain a clean, organized, and hygienic workstation at all times.
• Adhere to all food safety, HACCP, health, and hygiene procedures.
• Monitor stock levels and communicate shortages or ordering requirements to the Sous Chef.
• Minimize food waste through proper preparation, storage, and portion control.
• Ensure all equipment and utensils are properly cleaned and maintained.
• Assist with opening and closing procedures for the assigned section.
• Support menu development and contribute ideas for improving dishes and kitchen operations.
• Perform any other culinary duties assigned by the Sous Chef or Chef de Cuisine.

Qualifications and Experience

• Previous experience as a Chef de Partie or in a similar culinary position.
• 2-5 years of relevant experience in a professional kitchen environment.
• Experience in a high-end, fine-dining, hotel, or premium restaurant environment is preferred.
• Knowledge of Japanese, Nikkei, or Asian cuisine is an advantage.
