Restaurant General Manager

About the Role

Marriott Hotels & Resorts is seeking a Restaurant General Manager in Riyadh. This full-time role is central to maximizing financial performance and attracting both hotel and non-hotel guests by understanding the local market and collaborating with culinary leadership to position the outlet effectively. The General Manager will oversee daily restaurant operations, assist with menu planning, maintain sanitation standards, and support staff during peak periods, striving to continuously improve guest and employee satisfaction.

Key Responsibilities

• Drive restaurant business by understanding market demand, partnering with local community figures, analyzing competitors, and applying revenue management strategies.
• Control purchases and inventory through price negotiation, contract management, supplier list development, and usage report evaluation.
• Oversee the restaurant marketing plan in collaboration with hotel management and marketing teams, including supporting public relations and managing social media activities.
• Manage day-to-day restaurant operations, supervising employees, maintaining service and sanitation standards across all dining areas, and conducting daily taste panels.
• Monitor ambiance, compliance with laws and regulations, liquor control policies, and all food & beverage standards.
• Ensure all collateral, menus, and guest touch points are maintained to high standards.
• Foster memorable guest experiences by providing exceptional service, addressing guest feedback and complaints, and empowering employees to deliver high-quality service.
• Manage service delivery from guest entry to departure, ensuring excellent service at every touchpoint.
• Actively participate in the hiring process, provide guidance and direction to subordinates, set performance standards, and monitor performance.
• Identify training needs, develop and implement training programs, and facilitate fair treatment of employees.
• Improve employee retention and service performance by soliciting feedback, utilizing an open-door policy, and encouraging recognition.
• Establish and maintain collaborative relationships with employees, setting clear expectations and fostering mutual trust and respect.
• Manage staffing levels to meet service standards, operational needs, and financial objectives.

Qualifications and Experience

• A minimum of 5-10 years of experience in restaurant management.
• Demonstrated ability to maximize financial performance and drive business growth.
• Strong understanding of local market dynamics and competitor analysis.
• Experience in leading marketing, public relations, and social media activities for a restaurant.
• Proficiency in managing daily operations, including inventory, purchasing, and financial aspects.
• Proven leadership skills in managing and developing a team.
• Knowledge of applicable laws, regulations, and food & beverage policies, including sanitation and liquor control.

Additional Responsibilities

The Restaurant General Manager is expected to maintain professional and technical knowledge by tracking emerging trends in the restaurant industry, attending educational workshops, reviewing professional publications, and establishing personal networks. This includes providing information to supervisors, co-workers, and subordinates through various communication channels.
