Role Overview

Sheraton Hotels & Resorts is seeking a Director of Food & Beverage to lead the strategic business operations of the property’s food and beverage and culinary functions in Medina. This full-time role requires a seasoned professional with 5-10 years of experience to oversee restaurants, bars, room service, and banquets/catering, ensuring alignment with brand service strategies and initiatives. The position focuses on meeting target customer needs, enhancing employee satisfaction, and driving revenue growth to maximize financial performance.

Strategic Food & Beverage Leadership

This role functions as the strategic business leader for all food and beverage operations. Key responsibilities include developing and implementing departmental strategies, ensuring the operation meets brand targets, and maximizing the financial performance of the department. The Director will develop and execute property-wide strategies that deliver products and services exceeding customer and employee expectations, while providing a strong return on investment.

Key Responsibilities and Duties

  • Develop and maintain departmental goals, holding the leadership team accountable for service behaviors and financial performance against budget.
  • Formulate strategies to improve financial performance, making recommendations for capital expenditures on equipment and renovations.
  • Develop and manage the Food and Beverage budget, monitoring sales to ensure revenue goals are met or exceeded.
  • Ensure cash and liquor control policies are implemented and followed by all staff.
  • Lead the Food and Beverage team by fostering trust, mutual respect, and cooperation, serving as a role model for appropriate behaviors.
  • Identify opportunities to increase profits and create value through innovation and necessary change.
  • Ensure regular communication occurs across all food and beverage areas, including pre-meal briefings and staff meetings.
  • Develop and execute a food and beverage operating strategy aligned with the brand’s business strategy.
  • Provide guidance and coaching to staff to improve their knowledge and skills.
  • Stay informed of market trends and introduce new products to meet customer expectations and maintain a competitive market position.
  • Ensure exceptional customer service by empowering employees and addressing guest feedback from comment cards and satisfaction results.
  • Manage human resource activities, including setting performance standards, monitoring performance, and coaching the leadership team on managing costs.
  • Hire food and beverage leadership team members who demonstrate strong functional expertise and leadership qualities.
  • Communicate expectations and objectives clearly to subordinates and ensure fair and equitable treatment of all employees.
  • Inform executives, peers, and subordinates of relevant information in a timely manner.
  • Analyze information and evaluate results to solve problems and make informed decisions.
  • Estimate consumption of food, liquor, and beverages for purchasing and requisitioning.
  • Order and purchase necessary equipment and supplies.

Qualifications and Experience

Candidates must meet one of the following educational and experience requirements:

  • A high school diploma or GED, plus 6 years of experience in food and beverage, culinary, event management, or a related professional area.
  • A 2-year degree from an accredited university in Food Service Management, Hotel and Restaurant Management, Hospitality, Business Administration, or a related major, plus 4 years of experience in food and beverage, culinary, event management, or a related professional area.

Required Skills and Knowledge

  • Customer and Personal Service: Understanding principles and processes for providing quality customer service and evaluating satisfaction.
  • Management of Financial Resources: Expertise in budgeting, expenditure allocation, and financial accounting.
  • Administration and Management: Knowledge of business principles, strategic planning, resource allocation, human resources, leadership techniques, production methods, and coordination.
  • Applied Business Knowledge: Understanding market dynamics, enterprise objectives, and company business to diagnose strengths/weaknesses, anticipate opportunities/risks, and develop strategies.
  • Management of Material Resources: Proficiency in obtaining and appropriately utilizing equipment, facilities, and materials.

Work Location and Type

This is a full-time position located in Medina, Al-Madinah Al-Munawarah, Saudi Arabia, within Sheraton Hotels & Resorts.
