Boutique Group is establishing The Red Palace in Riyadh, Saudi Arabia, as an ultra-luxury boutique hotel. The Role: Chef De Partie

Boutique Group is seeking a full-time Chef De Partie for The Red Palace in Riyadh. This role involves supporting the Sous Chef in maintaining the highest product standards and contributing to profitability within the kitchen and other designated areas. The Chef De Partie is responsible for efficiently organizing and setting up their assigned section to enhance speed and maximize productivity, alongside conducting training sessions as outlined in the training plan.

Key Responsibilities

  • Assume full responsibility for the outlet in the absence of the Sous Chef.
  • Inspect food stores and implement proper storage practices, including FIFO (First-In, First-Out), to minimize wastage.
  • Supervise and manage the entire section’s operation to ensure adherence to correct procedures in daily food preparation.
  • Monitor food quality as per Leela standard recipes for both à la carte and buffet setups.
  • Ensure compliance with food safety and sanitation standards, local health regulations, industry best practices, and the Leela environment, safety, and hygiene policy.
  • Establish and enforce standard operating procedures for food handling, storage, and preparation.
  • Conduct regular inspections and audits to maintain high levels of food quality, hygiene, and safety.
  • Maintain a high level of cleanliness across all kitchen and heart-of-house areas.
  • Insist on personal hygiene, cleanliness, and grooming standards for all associates.

Operational Management and Team Engagement

  • Ensure all staff possess a high level of product knowledge to effectively explain services and facilities to clients.
  • Confirm associates are familiar with safety, current first aid, and fire emergency procedures.
  • Ensure all equipment is functioning correctly and serviced regularly, encouraging prompt reporting of failures.
  • Oversee the completion and submission of Maintenance Request Forms for all repairs and servicing.
  • Provide recommendations for promotions within the department and implement opportunities for quality team building.
  • Attend regular briefings conducted by the Sous Chef to involve associates in decision-making processes.
  • Encourage creativity and initiative among team members.
  • Ensure all supervised associates are fully aware of hotel rules, implementing them to the highest standards, and enforcing disciplinary action when necessary.
