Role Summary

Accor is seeking an Executive Sous Chef to join the culinary leadership team in Al Olaya District, Riyadh, Saudi Arabia. This full-time position involves partnering with the Executive Chef to oversee kitchen operations and ensure high standards of cuisine and guest experiences. The role focuses on culinary innovation, team mentorship, and contributing to a dynamic hospitality environment.

Key Responsibilities

  • Assist the Executive Chef in managing daily kitchen operations across all food service outlets, ensuring operational continuity and strategic alignment.
  • Uphold the highest standards of food quality, presentation, taste, and consistency for all culinary offerings.
  • Lead, coach, train, and motivate culinary teams, fostering a collaborative culture focused on continuous improvement and professional growth.
  • Contribute to menu planning and development, incorporating international culinary trends, brand guidelines, and local market preferences in Saudi Arabia.
  • Ensure strict compliance with HACCP protocols, food safety regulations, hygiene standards, and all local regulatory requirements.
  • Monitor and analyze food costs, inventory levels, labor expenses, and waste reduction initiatives to optimize profitability and operational efficiency.
  • Manage supplier relationships to ensure quality procurement, cost-effectiveness, and transparent communication.
  • Support the planning and execution of banquets, special events, and bespoke culinary projects, focusing on detail and guest satisfaction.
  • Collaborate with front-of-house, management, and support departments to ensure seamless kitchen operations and guest experiences.
  • Act as the Executive Chef when required, maintaining service delivery and organizational excellence.

Required Qualifications and Skills

  • A minimum of 5 years of proven experience in 5-star luxury hotels, fine-dining establishments, or high-volume hospitality operations.
  • Formal culinary degree, professional chef certification, or equivalent hands-on training from recognized culinary institutions.
  • International work exposure with demonstrated expertise in multiple global cuisines and culinary techniques.
  • Strong leadership, organizational, and interpersonal communication skills, with the ability to motivate and develop culinary teams.
  • In-depth knowledge of HACCP systems, food safety regulations, quality assurance standards, and local Saudi Arabian health and safety requirements.
  • Demonstrated ability to perform effectively in fast-paced, high-pressure, guest-focused environments while maintaining composure and decisiveness.
  • Advanced proficiency in budget management, cost control, inventory analysis, and financial accountability.
  • Experience in menu development, culinary innovation, and adapting concepts to market trends and guest preferences.
  • Demonstrated expertise in supplier relationship management and procurement negotiations.
  • Proficiency with kitchen management systems, food service technology, and modern culinary equipment.
  • Strong problem-solving capabilities and analytical skills with a goal-oriented mindset.
  • Cultural awareness and flexibility to work in a diverse, international hospitality setting.
  • Preferred: Experience in Middle Eastern cuisine or familiarity with Saudi Arabian culinary preferences and dining customs.
