Jr. Sous Chef

About the Role

Catrion Group is seeking a Jr. Sous Chef for a full-time position in Riyadh. This role is responsible for ensuring all food preparation and cooking adheres to agreed standards for healthcare operations. The Jr. Sous Chef will work closely with various sections and departments to maintain smooth daily operations and uphold high standards of food quality and hygiene.

Key Responsibilities

• Prepare and cook all food to agreed standards and proper amounts as per contract for healthcare operations.
• Ensure meal production aligns with company standards, individual client requirements, and agreed specifications of the Healthcare Project, served at correct temperature with quality and portion size.
• Cooperate closely with all sections and other related departments for smooth daily operations.
• Supervise the performance of kitchen staff to ensure proper activity and assist other kitchen staff as needed.
• Supervise and participate in daily production, taking responsibility for your own section and the running of other sections by junior staff.
• Supervise production in accordance with business requirements to control food waste.
• Assist in the completion of daily/weekly/monthly HACCP records and other documentation.
• Ensure kitchen staff work harmoniously for timely production.
• Suggest alternative raw materials when unavailable and inform the concerned section for appropriate action.
• Ensure correct packing and dispensing procedures are followed for meal delivery.
• Ensure all food items used are as per agreed purchase specification and report any poor-quality items to the storekeeper or line manager.
• Ensure personal working hygiene standards and those of responsible staff meet both company and statutory requirements.
• Ensure working areas are always kept clean.
• Ensure adequate manpower based on scheduled operational demands and workload.
• Assist in the evaluation of junior staff, identify gaps, and contribute to improvement plans, assisting with any employee grievance or disciplinary procedure.
• Assist in the planning of stores and deliveries as per business requirements.
• Report any incidents of fire, loss, damage, unfit food, and other irregularities, food complaints, and take appropriate action.
• Manage and rotate stock to ensure food safety, minimum wastage, and achievement of contract food costs.
• Assist Sous Chef/Chef De Cuisine in adhering to catering budgeting requirements and efficient use of all resources.
• Report any equipment defects or maintenance requirements that may hamper delivery.
• Liaise with dieticians to plan food ordering and with the logistics team for delivery.
• Attend Client and Company training courses as deemed necessary, fully supporting and participating in all Client and Company safety initiatives.
• Attend daily meetings, briefings, and trainings as required.
• Carry out any additional duties and tasks as requested, within your competency and forming part of the service to the client/contract.
• Partially responsible for the preparation of kitchen cleaning rosters and supervision of cleaning schedules.

Qualifications and Experience

• 2-5 years of experience in a relevant culinary role.

Work Environment and Location

This full-time position is based in Riyadh, Saudi Arabia. The role requires willingness to work in any location across KSA as assigned by the department manager.
