The Role of Pastry Chef De Partie

Boutique Group is seeking a dedicated Pastry Chef De Partie for its full-time operations in Riyadh. This role is central to ensuring the smooth operation of the Pastry and Bakery section, maintaining the high food quality standards set by the Pastry Chef. The Pastry Chef De Partie is expected to demonstrate professional discretion in food preparation to minimize waste and serve as a role model for other Pastry cooks through exemplary job performance and a positive outlook, while being proficient in all areas of the kitchen.

Operational Responsibilities

• Develop and improve team performance through coaching and feedback, and create performance and development goals for colleagues.
• Train colleagues to ensure compliance with expected standards and foster a collaborative working environment across departments.
• Motivate staff, report morale problems, and provide feedback on pastry and bakery operations to the Executive Pastry Chef.
• Ensure pastry goods are secure, stored safely, and stock is replenished to minimize waste.
• Check daily kitchen transfers and ensure they are logged into the computer.
• Collaborate with the Pastry Chef to resolve ongoing bakery and pastry operational issues.
• Delegate tasks to kitchen staff, ensuring consistent portion sizes for daily functions and outlets.
• Ensure all pastry equipment is operational and regularly cleaned, and report any equipment failure to the Executive Pastry Chef.
• Check daily function and outlet orders for inconsistencies and pass all relevant information to the following shift.
• Maintain updated food ordering records and ensure staff log their orders into the computer for review.
• Ensure correct produce rotation in main fridges.

Food Quality, Hygiene, and Safety Standards

• Ensure compliance with food safety and sanitation standards, local health regulations, and industry best practices.
• Establish and enforce standard operating procedures for food handling, storage, and preparation.
• Conduct regular inspections and audits to maintain the highest level of food quality, hygiene, and safety.
• Maintain pastry and bakery hygiene and safety standards through delegation and staff training, actively checking hygiene records.
• Demonstrate compliance with legislated health and safety requirements in the workplace.
• Initiate immediate action to correct hazardous situations and notify relevant associates of potential danger.
• Ensure associates maintain complete familiarity with safety, current first aid, and fire emergency procedures.
