About the Role

Em Sherif Group is seeking a skilled Pastry Chef to join their team in Riyadh. This full-time position requires a professional dedicated to maintaining high standards in a fast-paced culinary environment. The Pastry Chef will be responsible for all aspects of the pastry section, focusing on quality, cost control, hygiene, and safety.

Key Responsibilities

  • Oversee all pastry-related functions within the kitchen.
  • Ensure adherence to Em Sherif policies, procedures, specials, and promotions.
  • Maintain up-to-date knowledge of all Em Sherif pastry menus.
  • Report any maintenance issues in the pastry section to the Head Chef.
  • Participate in daily briefings and scheduled meetings.
  • Uphold Em Sherif's safety and hygiene standards and grooming requirements.
  • Foster positive working relationships with all employees.
  • Check the daily production schedule to determine variety and quantity of goods to bake.
  • Create and prepare desserts according to existing menus and Em Sherif Sea Café standards.
  • Decorate desserts as required and prepare plate desserts for service.
  • Implement and follow standardized and efficient pastry preparation processes.
  • Ensure consistency, application of standard recipes, and portion control for all pastry items.
  • Prepare specialty items as requested by the Head Chef.
  • Pay strict attention to measurements and timing during preparation.
  • Work according to production schedules, ensuring correct quantities are produced.
  • Prepare items needed for the following day and complete daily checklists.
  • Assist the Head Chef in monitoring pastry waste and suggesting improvements.
  • Ensure all prepared pastry items are stored appropriately and used according to the FIFO procedure.
  • Provide assistance in other areas of the kitchen or back-of-house as needed.

Procurement and Inventory

  • Assist the Head Chef with inventory control for the pastry section.
  • Support the Head Chef in managing requisition orders for pastry goods.
  • Aid in the receiving and storage processes for pastry ingredients and products.

Qualifications and Experience

The ideal candidate will possess 5-10 years of experience in pastry arts. A strong understanding of kitchen products, utensils, and equipment is essential. Proficiency in various pastry techniques is required, along with basic knowledge of fire, health, and safety procedures.
