About the Butcher Role at Rotana Hotels

Rotana Hotels is seeking a skilled and dynamic Butcher to join our kitchen team in Makkah. This full-time position requires a professional dedicated to maintaining high standards in meat and seafood preparation and contributing to an efficient kitchen operation.

Key Responsibilities

As a Butcher, your primary responsibilities will include the day-to-day operations of the butchery. This involves managing the ordering, receiving, and processing of all meat and seafood according to specific requirements. You will ensure that all products leaving the butchery meet the portion and presentation standards set by the Executive Chef, adhering strictly to recipes and presentation guidelines.

Maintaining the highest standards of hygiene and food safety, in line with HACCP guidelines and local regulations, is critical to ensure the quality and safety of food served to guests. You will also work collaboratively with other hotel departments to ensure a seamless operational flow. This includes checking function sheets and daily menu items to accurately determine food quantities needed, thereby preventing shortages or excess production.

Effective food cost control is essential, achieved through the preparation and review of store requisitions and direct purchases, ensuring accurate delivery of goods to meet budgeted profitability. You will attend required meetings and conduct daily briefings with your team to ensure efficient communication and smooth butchery operations. Furthermore, you will focus on employee development within your team, providing guidance and motivation to achieve high-quality standards.

Operational efficiency will be supported by effective planning of all fixed, flexible, and operating equipment for the butchery. You are expected to operate in a safe and environmentally friendly manner, protecting the health and safety of guests and employees, and conserving the environment. Compliance with the hotel's environmental, health, and safety policies and procedures is mandatory.

Qualifications and Experience

Candidates should possess a professional kitchen apprenticeship or a relevant chefs training course. Previous experience in quality establishments, coupled with strong culinary skills, is required. The ability to communicate effectively in English is essential for this role. A proven track record in food preparation, presentation, and preservation knowledge is a key requirement.
