The Role: Commis II

This full-time Commis II position is based in Jeddah, Makkah, Saudi Arabia, and is open to candidates with 0-1 years of experience in a culinary environment. The role involves supporting the kitchen operations to ensure the timely and efficient preparation of food items, adhering to established quality and safety standards.

Key Responsibilities

• Review daily production sheets with the Demi Chef, Chef de Partie, or Sous Chef.
• Prepare and, when required, delegate the production of necessary food items in accordance with standards, ensuring timely and efficient service.
• Actively participate in the training of junior culinary talent and apprentices.
• Adhere to standardized recipes and specifications to maintain consistency and meet all quality standards.
• Maintain a clean and organized workstation, including fridges, freezers, countertops, and stovetops.
• Ensure that station opening and closing procedures are carried out to standard.
• Minimize over-production and food waste, ensuring proper rotation, labeling, and storage of food to reduce costs.
• Operate all kitchen equipment safely at all times.
• Ensure all food products are handled, stored, prepared, and labeled properly and served safely, in accordance with hotel and government food safety guidelines, including HACCP principles.
• Report any deficiencies in kitchen equipment functionality or food product quality to the Chef de Partie or Sous Chef in a timely fashion.
• Comply with all safety regulations of assigned tasks and ensure a clean and safe working environment, with active participation in the hotel's health and safety program.
• Adhere to all environmental policies and programs as required.
• Communicate new developments to junior talent and follow up.
• Monitor deliveries and delegate tasks to arrange items accordingly.
• Follow established cleaning schedules.
• Conduct daily line checks.
• Complete entries in the kitchen log book.
• Manage the assigned section with confidence and a sense of urgency.
• Ensure full liaison and strong communication with other members of the section and the broader kitchen team, including the Chef de Partie, Executive Chef, and Sous Chefs.
• Collect daily operational data and report issues as they arise.
• Perform other reasonable duties as required.
