About the Role
Rotana Jabal Omar Makkah is seeking a dedicated and dynamic Sous Chef to join our culinary team in Makkah. This full-time position is designed for kitchen professionals committed to delivering high standards of service and culinary excellence. The Sous Chef plays a crucial role in ensuring the smooth operation of the main or outlet kitchen.
Role Purpose
As a Sous Chef, you will be responsible for overseeing kitchen operations with a primary focus on maintaining exceptional quality and presentation of all food items. This includes adhering to standardized menus and contributing to the continuous training and development of kitchen staff. The role requires a commitment to operational efficiency and culinary standards within the hotel environment.
Key Responsibilities
- Supervise the main or outlet kitchen in the preparation and presentation of all food items, ensuring adherence to the hotel’s Standard Operating Procedures (SOPs) and standardized menu guidelines.
- Monitor regular production standards to ensure the highest level of quality in all dishes.
- Oversee all aspects pertaining to the control of the hotel’s food cost.
- Participate in the drafting of concept ideas and menus for all special events and functions, encouraging and utilizing employee input where practical.
- Ensure HACCP standards are consistently implemented and that appropriate hygiene standards, as per Municipality requirements, are followed at all times.
- Conduct consistent on-the-job training sessions for culinary colleagues and actively promote health and safety practices within the kitchen environment.
Qualifications and Experience
- A minimum of 2 to 5 years of relevant experience in a professional kitchen environment.
- Demonstrated ability to deliver high levels of customer service and provide creative culinary solutions.
- Strong understanding of kitchen operations, food preparation, and presentation techniques.
- Knowledge of HACCP standards and local hygiene regulations.
