About the Role

Marriott International is seeking an Assistant Manager, Purchasing to join our team in Riyadh. This full-time role is central to managing established procedures related to ordering, receiving, storing, distributing, and processing payments for items. The position supports the efficient operation of purchasing across various departments, contributing to quality and profitability.

Core Purchasing Operations

  • Assist the Executive Chef in all aspects of purchasing, including Food, Beverage, and Controllable items, to ensure quality and profitability.
  • Order all food and beverage supplies based on business needs.
  • Assist the Executive Chef in maintaining and lowering budgeted food and controllable costs.
  • Enforce first-in/first-out inventory rotation for all storeroom products and maintain inventory controls for proper levels, dating, rotation, and requisitions.
  • Communicate with kitchen, restaurant management, and vendors to ensure timely deliveries satisfy advanced food production needs.
  • Check invoices on goods received against shipments to verify quantity, quality, weights, and purchase specifications.
  • Assist in receiving and inspecting all deliveries.
  • Ensure proper safeguards are in effect for the security of food and beverage storeroom assets.
  • Enforce item use-up with storeroom personnel and kitchen management to keep inventory at the lowest possible levels.
  • Assure sanitation compliance and maintain sanitation and safety standards as specified in brand guidelines.

Financial Oversight and Compliance

  • Use existing computer programs to perform daily and period-end food and beverage cost calculations.
  • Complete period-end inventory according to Food and Beverage and Accounting standard operating procedures, including calculating figures for inventory.
  • Maintain an accurate controllable log and beverage perpetual.
  • Ensure accurate administration of all invoices and adherence to proper bookkeeping procedures.
  • Submit reports in a timely manner, ensuring delivery deadlines, and ensure profits and losses are documented accurately.
  • Monitor all applicable taxes, ensuring they are current, collected, and/or accrued.
  • Ensure that price and product availability issues are communicated as needed to the F&B Director and Executive Chef.

Administrative and Communication Responsibilities

  • Assist with generating and providing accurate and timely results in the form of reports and presentations.
  • Compile, code, categorize, calculate, tabulate, audit, or verify information or data.
  • Complete administrative tasks on a timely basis, including C-7s, menu costing, and general office duties.
  • Provide information to supervisors, co-workers, and subordinates via telephone, in written form, e-mail, or in person.
  • Analyze information and evaluate results to choose the best solutions and solve problems.
  • Inform and/or update executives, peers, and subordinates on relevant information in a timely manner.
  • Provide direction and assistance to other organizational units regarding accounting and budgeting policies and procedures, and efficient control and utilization of financial resources.
  • Attend and participate in all pertinent meetings.

Qualifications and Skills

Candidates should possess 0-1 years of relevant experience in purchasing or a related field. The role requires demonstrated knowledge of job-relevant issues, products, systems, and processes, including proficiency in *** standards.

Essential skills include using computers and computer systems (hardware and software) to program, set up functions, enter data, or process information. The ability to use existing computer programs effectively to post invoices, update items, and costs is also required. Candidates must be able to use relevant information and individual judgment to determine whether events or processes comply with laws, regulations, or standards, and are expected to keep up-to-date technically, applying new knowledge to the job.

Work Environment

This full-time position is based in Riyadh. The Assistant Manager, Purchasing will regularly interact with kitchen staff, vendors, and the Executive Chef, fostering collaborative relationships to ensure smooth purchasing operations.
